That's kind of like a pineapple/coconut cake I make.  Use a white or yellow cake, poke holes and pour  a can of cream of coconut mixed with a can of sweetened condensed milk.  Add a layer of drained crushed pineapple and top with coolwhip sprinkled with coconut.

Oh, wow --- I LOVE cream of coconut --- that sounds like a lovely cake.
lol lol --- and I have many - probably more than a dozen - cans of that stuff.  I use so much in that fantastic white macadamia fudge so I want to keep it on hand.

 Earlier today I had a  small boneless  Chinese pork roast & some pre-made eggrolls in my oven( appetizers for our noontime
pare a variety of appetizers ahead of time; freze them to reheat @ 400' in time for  our luncheon meal of Asian soup & a veggie stir-fry entrée w/ rice or  noodles. Work on one day makes a delightful easy&  quick meal on another( justlike many restaurants do:>)(self portrait)

Hi Bakery --For years  I've been making something similar.  I bake a chocolate cake mix in a 9x13 pan - when it's cool poke holes all over it and dump on a jar of Smucker's caramel ice cream topping.  Then dump in a can of Eagle Brand Sweetened Condensed Milk. Frost it with a carton of Cool Whip and cover that with shaved chocolate or chopped nuts, crushed peppermint -- whatever you want. Please, I would love to have the recipe for your topping.  Thanks And - what is the caramel sauce you use?

Nancy, I use a caramel apple dip for the caramel in lthis cake.  It is thicker than the ice cream topping. 

For the frosting I used this recipe:

EASY HOMEMADE WHIPPED CREAM FROSTING - This frosting won't wilt at room temperature like regular whipped cream frostings.

1 (8 oz) package reduced-fat cream cheese, softened
1/2 cup white sugar
1 tsp van extract
1/2 tsp almond extract
2 cups heavy cream

Combine the cr cheese, sugar, vanilla and almond extracts in a large bowl - I used my mixer bowl.  Mix on mediuim speed until smooth.

Slowly pour in the heavy cream while the mixer is still whipping.

Stop and scrape the bottom of the bowl a few times while you continue to whip the frosting.  Whip on medium speed until the cream can hold a soft peak.  So easy to spread!

Thanks, Bakery --  That sounds so good!   As many times as I've made caramel apples, I've never bought that kind - I've never even tasted it.
I always buy a bag of Kraft caramel and sit muttering while I unwrap them.  (I've tried the little bits of caramel which work great in cookies but I don't like them for apples)

This frosting sounds soooooo gooooood!
The cake sounds just slightly decadent as well.  Good thing you use the low fat cream cheese, have to save calories anywhere we can. 

Thanks for the recipes.  By the way this frosting sounds like it would be good on the recipe that was posted for the Hawaiian wedding cake (I think that was the name of it)

I just finished a batch of Chocolate Dipped Toffee Bits Cookies and a batch of Chocolate Chunk Oatmeal w/Pecans and Cherries.
Really good cookies but it's still a bit too warm to be baking.
Now I have to figure out an excuse to make Judy's cake.   hmmmmmmm wonder if the woman next door could use some.

Nikki, this frosting is great piped onto the top of a cake or dessert pie.  It really doesn't melt/wilt with being out of the fridge.  I like to put it into a sandwich bag, snip one end and pipe it onto the top of the cake, looks so elegant.

This morning I remembered to buy yellow cake mix and a can of pineapple so I could try this recipe, but I forgot the Cool  Whip.  Later this evening I'll head back to the store.
Right now I'm busy - lol - chopping macadamia nuts so I can make more white fudge.

I took it to work once for the person whose name I drew for birthday treat.  One of the guys asked for the recipe and now he makes it frequently

Since it was cool and rainy yesterday, my oven was busy.  I made a Texas sheet cake to take to work and while that was baking I stirred up a chocolate chip date cake for us.  Both came out really good.

It was funny how I chose to make the date cake.  I got out my Farm Journal cake cookbook for the Texas sheet cake and opened it to the date cake.  I thought it would be good so made it.  Kind of like throwing a dart at a bunch of recipes saying I'd make whichever one it hit.

Judy - I like your thought about throwing a dart at a bunch of recipes.  When my children were little I would get out our favorite cookbook and have them flip the pages and stop at a page with their finger, each child would get a turn.  We would then work on each recipe together and have a lot of fun in the process.  By doing this we weeded out a lot of recipes but we also found some family favorites.

Whew .........................
My computer is working!!  Charter was here fixing wires for 2 1/2 hours...... now new wires are on top of the grass behind this condo.  Another team will have to come bury it. 

Judy - thanks for the recipe.  I ate about 1" x 1/2" and gave the whole thing to my neighbor.  The bite I had was VERY good.  My neighbor says the bite she had was delicious.   She's taking the whole cake to her school.

With no computer I made batch after batch after batch of candy.  LOL LOL.  Some went to the kids at church school and some went to my neighbor.  Her school is having a dinner tonight and this will be a part of their dessert.
