Today therefrig. tech came to do the annual check up& cleaning ( done FREE under  service contract)
Icouldnot get to the refrigerator to  take out ingredients to make lunch
So hubby made his own
I used thetime to cut up a"ton of root veggiesfor tonight's traditional boiled dinner;
& later, when the kitchen was once again mine, to use, ;  I  made had  a quick & easy meal for myself:
Today, THURSDAY;

NOON:    

HE: boloney sandwich w/ l & t, cheese  slice Diet cola Ice cream sandwich
ME: salad of mixed baby greens; dried cranberries, blue cheese;
 p
om dressing Hot tea Brown rice pudding cup
 
DINNER::BOILED DINNER: Corned beef Cabbage
redskin
Potatoes
Purple top  tunips
 Parsnips Crusty
multi grain bread& butter
 
Beverage choice(s) hot tea & /or diet cola
 
St Pat’s day cookies;
shamrock shaped sugar cookie w/ green sugar topping

Nothing in myoven, today.
 Hubby madesandwichesforlunch and I made stirfry for dinner; w/steamedrice&steamedrice noodles( chow foon) Still enjoying cake & cookies baked ealier in the week
Fresh fruit( canteloupe; oranges & apples) , for the most part, require no baking.

 HiSue; I almost made cornbread yesterday ( jhad a craving), to go w/the chili hubby requested; but then when given the choice; brownies or corn bread; no surprise; , brownies won. Wink I have my limitations & cannot fullfil  all requests( on a poor nights sleep)

Nothing is in my oven at the moment;
Earlier: asst. bluebueberry muffins & an  8"x 8" pan of  an oatmeal  blueberry cake; good eaten' for the rest of the week  ( hopefully)

Tonight will be a pork loin cut in half with green peppers, honey teraiki sauce, cut up peeled potatoes.  Of course slow cooked at 325 degrees.  Dessert of course ice crema

Hi Nancy W -- welcome to VBB.  I have a little pork loin in my freezer waiting to be baked.  Could I have your teraiki recipe - or do you use a bottled one?

Having had"the day off' from cooking(lunch out); baked 2 dozen chco-chip oatmeal nut cookie & an 8'x8" panof strawberry banana choco-chip walnut cake.
 also homemade potato chipsfrom two potatos

Whew;I'm worn out quite happy!

Yesterday I made two potatos into (oven baked)  potato chips.
Today, I made3 more intomore [ oven baked] potato chips; sprinkledw/onion powder.
 They were so good that hubby gobbled them down during & between meals.
The rest of the day was serve yourself so I stayed out of thekitchen( another cook's day off)Laughing

Only the delightful residual aroma of homemade ALMOND COOKIES.!
It seems ike I just baked 2.5  dozen  &  we've already eaten the last ones tonight ( after yummy bowls of beef & veggie pho 
I baked 5 dozen more  tonight & hope we'll have enough for a few weeksUndecided
I got myself into this byrecallingtheAlmondcookiesofouryouthinNYC; whereChinaown wasonly asubway train ride away & every neighborhood had at least one  Chinese restaurant that serve dalmond cookies after meals.
when welivedinClifornia; bakeriessellingalmondcokieswereonlyan hourdrivefrom home.Itwaseasy to pickup abox of12& weenjoyedthem often
Then we found out  that these cookies were made w/ lard....It  it gave them that great mouth-feel
So even though we're only an hour from Boston's Chinatown, Idecided to no longer buythese.I gave alotofthoughtto makingthem myself: and decided to try a batch a few weeks ago.I added Almond extract to regular sugar cookies( made w/ canola oil instead of butte orlard.r.They were pretty  good,So good in fact that hubby almost doesn't mind the nearly $3 cost of a small bottle of almond extract
 Good thing,I only had enough extract to make 10 dozen cookies. We will need another bottle in a few weeks; beforeI can make the next batch of Almond cookiesMoney mouth

Havingspent much of thispas tweek baking cokies & cake, I promissed myself that today,I would not bake any more sweets.
Instead I baked my sister in laws pot roast; 3 hours in the oven.I kept my self-promise& baked no sweets; such a waste  of a hot(350' ) oven
where cokieswouldhavebeen just therightthingto cookalongw/.I made ( at hubby'sreuest) some redskin roast potatoes; a lovely addition to the pot roast.We have enough pot roast reruns for another meal.I'll serve it w/noodles to make it seem less of "same old same old"; not that either of us would complain; it was really delishSmileCool
