Oh, Jusy -- those apple cinnamon rolls sure SOUND good. The dough is "resting" ? Is that rising from ~yikes~ yeast? I can't make anything with yeast.... it's beyond me.

Nancy, I mostly use the rapid rise yeast as it goes quicker. The first "rise" is a 10 minute rest. Then the dough is shaped into whatever I'm making and then it rises 30-45 minutes until puffy. We have sampled the rolls and they came out fabulous. They are nice and light and fluffy with lots of good cinnamon flavor and the apple filling is great. I think that one is a keeper.
A lot of people think they can't make anything with yeast. I teach some classes for the adult education group here. They all are about baking. In fact one is cinnamon rolls. I've been doing that for over 30 years.
Secrets to good yeast stuff is don't have the liquids too hot (kills the yeast) and don't use too much flour (makes the dough dry).
