Large eggs?  When using my Mother's tradional recipes, I wasn't happy with the way they were turning out. Then, I had a flash of understanding!  Most of those recipes were developed when we had our own hens.  Naturally, Mom picked the biggest, prettiest eggs when getting ready to bake.  When I switched to what the store called "extra large", everything turned out the way I remembered Mom's goodies.
Now  I only buy extra large unless I can't find any that day - in that case I add an extra egg to the recipe.

I have never tried duck eggs.  I would imagine they are a bit richer than chicken eggs.  I say that only because duck meat has a bit more fat to it I can only imagine the eggs would as well.

Nancy the apricot coffee cake sounds like a real winner.  I love apricots and almond together. I may use some almond extract in place of the lemon. 
This will be made this weekend...if I can find a pan.  I am starting to pack so the kitchen is in "transition".

That apricot coffee cake is amazingly good ..... I'm not certain about the almond extract instead of lemon.  I'm too cowardly to try reach for a new idea.  So YOU try it and let me know how it goes  Laughing

Frances - that's something for me to think about.  Now, for all use including baking, I buy the "Large" eggs.  Large - hah!  I'm going to get brave and add an extra egg when I'm making a big batch of something.  Thanks

In my oven, as i type, is Nancy's apricot coffee cake.  That will go with my tea for mid morning snack today.  i keep a container with shaker top that I mix cinnamon and sugar so I always have it handy.  I sprinkled a lot on top of the apricots.

About the duck eggs--I guess maybe they are a bit richer, but have a wonderful flavor.  The whites are really clear, not yellowish like chicken eggs. The shells are really hard so you have to give them a good whack to get them open.  After using duck eggs for a while, if I have to go back to chicken eggs, I practically destroy the first few I open because I whack them too hard.

Frances, I too had come to that conclusion, using extra-large eggs.  If I have a recipe that calls for large but not extra large eggs, I just spoon out a little of the egg white and use all the rest.  I find that recipes turn out great with the extra large eggs.

how do you make your cobbler------
my gm and mom always made a double crusted cobbler that was close to pie dough or biscuit dough, crusty but in the inside it had sort of ( dumpling ?) in the peaches ........not  too sweet  like most recipes i've found while looking........although we are a family (large) of good cooks and bakers.........we"ve never been able to duplicate this cobbler......................any suggestions?     ......

Nancy, i can see why you ate the whole thing once.  We had 1/3 of it for morning snack (elevenses) with our tea.  it was fantastic.  Will definitely make it again.  I might double the recipe and make it in a 9 x 13 pan.  Thanks for sharing the recipe.  I forgot to put in the lemon extract but I don't think it made any difference.  My apricots were canned in pear juice which was really good.  i try not to get fruit in heavy syrup.

Nellie V,  I don't have a recipe for peach cobbler! It was the first time that I made it.
I had to do it for 1 of my survey sites. They send you the ingredients and I had to
buy the peaches. It had cinnamon, ginger, and nutmeg in it. The combination of the
spices were great. This was peaches with the spices on the bottom layer and you
dropped dough by tablespoon onto the peach mixture and baked. I would use a all
purpose baking mix like Bisquick. You are not allowed to give out the recipe re the
survey site.

Carol, were you doing it for "Cook's" Magazine or "Cook's Country" Magazine?  I get recipes to try from Cook's Country occasionally.  It is fun to see if they put the same recipe in the magazine or if they change it somewhat.  They also ask that you not publish the recipe until it is published in the magazine, and that you give them credit!

Barbara,  It was not from Cook's or Cook's Country magazine! This is from 1 of my survey
sites!  I get points and get gifts or money. They sent spices this time and I got the peaches
and the rest! They do a follow up survey and you get more points when you take it. You can't
give out the recipe because they ask you not to. The product is not in stores yet! They want
you to try it and if enough people like it they will have it put in stores. It is a lot of fun to help
them out and to also get points. I have been doing this for several years now but the last
year was slower because of the economy.

I missed the recipe for apricot coffee cake. It sounds good and I was wondering if anyone still has it and can put it on a post. I really would like to try it.  I don't have the time to view 21 pages of talk and would love someone to help me out!
