I have sooooooo many cookies in the freezer.  Too many for Easter Sunday dinner at church!! 
And they've  all been in the freezer long enough.
I think I'll take bags of them to give to special people? 
Or I could take them to school Monday morning ....
Mail them to the kids at college?

What's funny as I feel almost compelled to bake.

I baked a Key lime Cream Cheese Pound Cake. I used fresh key limes that I paid 1.00 for 20 ( Twenty  Key limes). I also paid 95 cents for 10 regular limes. I  juiced them and grated the rind for the cake. I froze the remaining juice and left over grated rind. I usually  juice and grate the limes the day before however I did not have them. It is hard to find Key limes or  regular limes that cheap. I needed both to make the cake.

today i'm baking a yellow cake from a mix to serve with strawberries and whipped cream tomorrow, also must clean and slice strawberries

also baking the sweet potatoes today to candy tomorrow

I have made my Easter bread that has lemon rind, cardamom, raisins and almonds in it.  I use fast yeast so it doesn't take too long to rise.  In my oven now is the Lemon cheesecake.  I'll let you all know how it turned out.

Nancy, I always put some cookies in the freezer each time I bake some.  They stay nice and fresh and if  I want something with a cup of tea, there they are.

I just made Gale's Italian Love Cake, letting it cool before putting the topping on. Smells and looks great.

Today I tried out a VBB  recipe for PB choco-chip cookies.I used Splenda brown sugar blend for both  the sugar &   brown sugar called for.
The WHOLE WHEAT flour as called for fit right into  our effort to eat only whole grain foods.Our grocery store had a good sale on40 oz jars of PB last week & I had enough semi sweet chocolate morsels and  fat & cholesterol free  egg product to make 3 dozen nice sized oookies
The recipe was surprisingly easy and before  I knew it,we were both munching on some pretty  yummy cookies

I love a good pineapple upside down cake. 

Tonight I made a Carrot Cake and Cream Cheese frosting for it.  It is cooling on the counter as I sit here killing time until I can frost it.
I think Carrot cake is just an excuse to eat cream cheese frosting.

Here's the report on the lemon cheesecake that is on the Betty Crocker calendar for April.  We just sampled it and hubby gave it 5 stars.  It is very good; light and fluffy with a subtle lemon flavor.  the hardest part making it was getting the crust material even and up the sides of the springform pan.  I used 1 1/2 cups of the instant lemon pudding I made instead of buying the little containers of pudding.  Worked great.

Tonight  fixed baked potatoes, couple of pork chops and mac-n-cheese all at the same time in the oven. Felt like I was conserving something but can't figure out what if anything it is. Oh well Happy Easter and I'm saving the ham for next week.

Judy,  Thanks for lettng us know and great that instant lemon pudding worked.  Sorry you had a hard
with the crust. I'm looking at the picture right now, it looks like the crust isn't smooth and is uneven.
Looks like they had a hard time too!!!  I'm glad you liked it.  I will have to try this soon!!!

nothing in my oven today; hubby gave me another "day off".I will be microwaving  an (oven too)  reruns of a lamb roast later; Yesterday( I  baked a few dozen cookies &will bake more cookies & a cake in the next few daysSmile

I wasn't sure where to post this, but I just had to share this with my VBB friends!

At Easter, our Granddaughter wanted to make this special dessert and oh my was it good!  This is so easy to make!

This is what you need:

13 x 9 pan
2 -  8 oz. containers of Cool Whip
2 - packages of Choc. Chip cookies or home-made
1 Qt. whole milk

Fill a bowl with milk and dip a choc. chip cookie in the milk just, enough to soften but not that it falls apart and lay in pan.  Dip enough cookies to cover the bottom of pan.  Then you put a layer of cool whip.  Another layer of the dipped cookies, layer of cool whip.  Cover and refrigerate over night.  Serve the next day!   

I could not believe how good this was, I hope you try it!

Earlier todayI baked/roasted some redskin potato wedges for supper& a batch of redskin potato chips, seasoned w/o salt; used onion powder on some & chili powder on the restTongue out
