Trying a new recipe that sounds good, Banana Walnut Mini Loaves from T**t* of *o*e.
1/2 cup butter, softened 1 cup sugar 2 eggs 1 1/3 cups mashed bananas (2-3 medium bananas) 1 3/4 cups all purpose flour 2 tsp ground cardamon 1 tsp baking soda 1/2 tsp ground cinnamon 1/2 tsp ground nutmeg 2/3 cup walnuts (suggests black walnuts but I use what I have on hand)
Cinnamon Spread:
1 8 oz cream cheese, softened 3 Tbs confectioners sugar 1/2 tsp ground cinnamon
In large bowl, cream butter and sugar until light and fluffy. Add eggs one-at-a-time, beating well after each addition. Beat in the bananas.
Combine flour, cardamon, baking soda, cinnamon and nutmeg; gradually add to banana mixture just until moisened. Fold in walnuts.
Pour into six greased 4 1/2" x 2 1/2" x 1 1/2" loaf pans. Bake 350 for 22-26 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 mins before removing from pans. Cool on wire rack.
In small bowl combine the spread ingredients. Serve with bread. Refrigerate left over spread.
Yields 6 loaves and 1 cup of spread.
*** Could be made in a larger loaf pan, as long as it is baked until toothpick comes out clean.
