Oh I think we had too much, there were only the five of us for dinner.I always make too much,I'm so used to cooking for a crowd I still haven't gotten used to cooking for just us. During the summer months we have get togethers on our street every weekend. In the fall we have a fire and everyone brings something to share.I'm still in that mode.I think I need to slow down.Every thing was good and I sent left overs home with my son and daughter in law.I need to take a nap now.

In my oven....right now.....green hubbard squash! I cut 6 of them in half this morning, scooped out all the seeds and insides. Have a big pan I can fit three halves at a time in to bake. They usually take about an hour, a little longer if they are huge, like a couple of them were. Then take them out of the oven, scoop the squash out of the shell into a bowl. I add a small chunk of butter and either maple syrup or brown sugar, along with a touch of salt and pepper. I just finished one batch and have a bowl full of squash ready to eat....probably have some for lunch and then the rest will go into Ziploc bags for the freezer. It's good, but I think my favorite squash is the little acorn or butternut.
After the squash is done, chocolate chip cookies will be going into the oven!

Carol the squash sounds real good and the cookies too! Have you ever had spagetti squash? I make that and put salt, pepper, butter and parmesan cheese on it and it's wonderful.

Sounds strange but in my oven now is a trial recipe for a snack. Toasted garbanzo beans.  I figured I would try them now and if they are good I will make them for the times I need a little "nibbley snack" for a party. The full recipe is: 2 Cans of garbanzo beans. 1/2 Cup parmesean cheese 1/2 tsp salt (although that probably be eliminated due to the cheese.) 1/2 tsp ground pepper 1/4 tsp cayenne pepper, more or less to taste. 1Tb olive oil. Drain and rinse the beans.  Allow to dry on a towel.  Pull off any loose skins. Pour olive oil over dry beans.  Stir to coat. Combine all dry ingredients.  Shake the beans in the dry mixture until well coated. Place on a rimmed baking sheet and bake at 350 for 55 to 60 minutes or until beans are dry and toasty.  Shake pan several times during baking. Cool and store covered. Ok, they are out of the oven and really do taste pretty good.  I think they do need the extra bit of salt.  They won't replace chips and dip or a bowl of nuts but for a lower fat snack they are pretty good.  I think the flavors that could be added are pretty endless.  They might be pretty good added to a chex type snack mix.

Gale, yes, I love spaghetti squash! We don't like parmesan, but put salt, pepper and butter on it. Haven't had any in awhile though as we didn't get any of that planted in our garden this year.

Yum, Maryann, doesn't it smell soooo good when you're baking?! My kitchen did yesterday when I had squash in the oven, then apple pie, choc chip cookies, and applesauce cooking on the stovetop. Makes the house smell sooo good! Have fun baking today!!

Today, I will be baking up more butternut squash to scoop out and put into our freezer. Going to also try to get an applesauce cake into the oven for dinner tonight!

Susan, what do you do to your pretzels?  I think the addition of pretzels would make the chickpeas a little more interesting.  I even thought of a "clever" name...I could call it Sticks and Stones.

Today I really have to get to work on some wall hangings for two Sunday School rooms at church .... so I'll just  bake a couple batches of simple ones.    Probably candy cane/peppermint and things like that.

Peanut butter cookies are going in and soon to follow will be Oatmeal Scotchies.
Also plan on making a cranberry up side down cake I saw just a bit ago on All Recipes.  That will be for this weekend.   Going into the freezer will be Sticky Ginger Squares.  Got my crystallized ginger and molasses and I am ready to bake.
