Tonight I used the LEMON COCONUT CAKE WITH LEMON GLAZE recipe for 24 cupcakes .......... They are very pretty and good tasting -- not great tasting.  The texture is great but the taste is .......... ??  Very mild (?) lemon and coconut taste.    I will be trying this again because it's good .... I wonder if maybe more lemon will make it great.

I bet the kids who get them tomorrow night will think they are great.

Nancy, maybe if you used lemon juice instead of extract you'd have a more lemony taste.  I think especially for the glaze it would be good.

I never thought of that!!    I have no lemons but do have 3 big limes waiting to be used.  Oh, I wonder how that recipe would be with lime?   I guess there's just one way to find out.

I usually keep lemon juice and grated rind in my freezer, since I don't keep lemons around.  I'll grate the rind off, wrap it in plastic wrap and foil and then juice the lemon, putting it in a small glass jar in the freezer.  I used to put it in small yogurt containers, but it doesn't seem like it keeps as well.  Not as air tight, I guess.

Judy -- if you do that successfully with lemons - I bet I can do it with limes.
Maybe those cookies I love would be just as good with lemons  but I love the lime.
That  lemon coconut cake with lemon glaze can use the improvement.

Judy - I never thought of keeping lemon rind in the freezer.  What a clever idea!  This is one of the reasons I love VBB!

This morning I baked a double batch of gingersnaps.  Now the cookie jar is full so hubby can snack.  It may be a few days before I feel like baking again.

I also put grated orange rind in the freezer whenever I have oranges.  I know they sell the dried stuff, but it doesn't have much flavor.  Sure you could do that with extra limes, Nancy

 The onion rings & pigs in blankets were reheated in the oven w/ the baing browies , confusng my senses w/ competing aromas Wink

 I'm hoping to make prune cake tomorrow. I got it from a grocery store in a different town. They have those bins where you can buy in bulk & along side they have recipes for what you are getting. This prune cake is sooo goood.

 I made a lemon poke cake for tomorrow. My daughter and I are going to go shopping in another town and we always stop at a park and have lunch. My town doesn't have a mall & it always amazes me at all the people!

Earlier this week I baked ( to crisp some taco shells, for dinner as well as baked a batch of fudge rownies( nearly gone , they were that delicious)!!!!)
I baked a few Russet baking potatos to top w/ either chili or sour cream chives: EZ meals
Today, I started to make a batch of triple chocolatechipcookes & I'm still waiting for the butter to reach room temp. W/o going shopping

My husband has requested some oatmeal raisin cookies so I think I'll get going on those today.  The problem is that I could eat a dozen of them while enjoying a pot of coffee.  I'd much rather eat the freshly baked cookies than eat a healthy lunch.  That couldn't possibly be behind my problem with my weight - ha!
