RAISIN FILLED COOKIES
1 cup packed brown sugar 1/4 tsp ground nutmeg
1 cup white sugar 1/2 tsp salt
1 cup butter or margarine, softened 3 Tbs buttermilk - I make my own with milk and vinegar or lemon
3 eggs FILLING:
2 Tbs vanilla 1 Tbs cornstarch
5 cups all purpose flour 3 Tbs all purpose flour
1 tsp baking powder 1 cup packed brown sugar
1 tsp baking soda 2 cups boiling water
1 1/2 cups seedless raisins
In a mixing bowl, cream sugars and butter. Add eggs, beating well after each addition. Add vanilla. Combine dry ingredients: add alternately with buttermilk to creamed mixture. Mix well. Chill.
Filling: Combine cornstarch, flour and brown sugar in a saucepan. Add water, stirring constantly. Add raisins; stir and cook until mixture comes to a boil and thickens (about 3 minutes). Cool.
On a floured surface, roll dough and cut into 3" circles. Spoon 2 tsp filling on the circle and top with another circle. Pinch edges of circle together and cut a small slit in the top. Repeat with remaining dough. Place on ungreased baking sheets. Bake at 350 degrees for 10-13 minutes or until lightly browned.
