Nancy, took the Tiger Butter recipe to my daughter's in Prescott, AZ.  My grandson and I made it for the family.  They loved, loved, loved it!

Might be a good day for making candy but I just stirred up my first batch of Land O Lakes butter Double Chip Pecan Cookies -- a chocolate chip cookie with a cup of butterscotch chips. 
The dough is in the 'fridge -- I'll bake them later tonight.

Oh, goodie, goodie, goodie!!!  Laughing

Have you seen a Tiger Butter recipe in other sites?  The chocolate layer is "pulled" into the peanut butter and swirled around so it looks like stripes.   I prefer the solid color two layer Nestles uses.

Yesterday I made a batch of pear muffins.  I have lots from my tree.  As long as the oven was warm I made oatmeal brownies.

I used some of my fresh apples in an apple spice cake.  I had one years ago that our whole family loved, but I lost it in one of our moves.  I hope this cake tastes as good - it certainly smells good.

I don't have the apple spice cake but I did copy the brownie recipe.  I think this is the one
Brownies 
3/4 Cup greek style yogurt
1/4 Cup skim milk
1/2 Cup cocoa
1/2 Cup oats
1/2 Cup sweetener
1 egg
1/3 Cup applesauce
1 tsp baking powder
pinch of salt
Pre heat oven to 400
line 8X8 pan with parchment
Process oats until fine
Combine all ingredients until smooth.
Pour into pan.
Bake 15 minutes. 
If I recall these were under the heading of 35 calorie brownies. 


Now..in my oven.  I just took out a Pumpkin Crunch Cake that I made and will be delivered to the Adult Day Care when I drop off my husband tomorrow.

Yesterday I made chocolate babka.  I've had it at Panera as it is one of their seasonal items.  I loved it so went on line to find a recipe.
The Panera site even had a video to show how it is made.  It is wonderful but takes a while from start to finish.  Yes, Nancy, it has yeast.

Chocolate Mint Divinity\
Chocolate Mint Divinity from BH&G
2 - 7  ounce bars  milk chocolate
  • 2 1/2  cups  sugar
  • 1/2  cup  light-colored corn syrup
  • 1/2  cup  water
  • 2  egg whites
  • 2  squares  (2 ounces) unsweetened chocolate, melted and cooled
  • 1/2  teaspoon  peppermint extract
  • 1/4  cup  crushed peppermint candies
Directions
1. Line a 9x9x2-inch www.bhg.com/shop/kitchen/bakeware/baking-pans-a3040.html?psrc=C1302BLS0000C076d&lc=int_mb_1001" target="_blank" class="yiv9767684132mandelbrot_refrag">baking pan with foil, extending foil over edges of pan. Butter foil; line with chocolate bars. Set pan aside.
2. In a heavy 2-quart saucepan combine sugar, corn syrup, and water. Cook over medium-high heat to boiling, stirring constantly with a wooden spoon to dissolve sugar. This should take 5 to 7 minutes. Avoid splashing mixture on sides of pan. Carefully clip candy thermometer to pan. Cook over medium heat, without stirring, to 260 degree F, hard-ball stage. Mixture should boil at moderate, steady rate over entire surface. Reaching hard-ball stage should take about 15 minutes.
3. Remove pan from heat; remove thermometer. In a large mixer bowl, immediately beat egg whites with a sturdy, freestanding electric mixer until stiff peaks form (tips stand straight).
4. Gradually pour hot mixture in a thin stream (slightly less than 1/8-inch diameter) over egg whites, beating on high speed and scraping bowl occasionally. This should take about 3 minutes. (Add mixture slowly to ensure proper blending.) Add unsweetened chocolate and peppermint extract. Continue beating on high speed, scraping bowl occasionally, just until candy starts to lose its gloss. When beaters are lifted, mixture should fall in a ribbon, but mound on itself and not disappear into remaining mixture. Final beating should take 5 to 6 minutes.
5. Immediately spread over chocolate bars in prepared pan. Sprinkle with crushed candies. When firm, lift out of pan; cut into 1-inch squares. Store tightly covered. Makes 81 pieces.

  • Up to 3 days ahead prepare divinity. Store at room temperature in a tightly covered container.

Nancy - Thank you for the chocolate divinity recipe.  It sounds and looks delicious.

Today I made our favorite cake - it's a quadruple chocolate bundt cake.  Chocolate cake mix (the darkest, richest one you can find), chocolate fudge instant pudding, chocolate chips and topped with a chocolate fudge frosting.  I'm giving it away, which is a good thing because I could sit down right now and eat a big chunk of it.
