GRANA here;
II baked @ $25' to reheat my frozen fish& onion rings @ lunchtime, enough baking for me; I'm  not interested in spending time cooking & baking, did enough of that earlier. And then hubby brought home a store bought triple chocolate Bundt cake ; delicious &   at a very low price($2.99) so all my hard work  was appreciated but semi-wasted.
The Hungarian cabbage soup made yesterday, got "rave reviews from hubby tonight...As a reward; tomorrow I get the day off after shopping for an eternity band for our51st anniversary ( on Monday)We will go to the FOOD COURTUndecided at the Mall near the jewelry store where he can have a slice of PIZZA and I can have my choice of Chinese foods ( tofu, spring rolls, boneless ribs . We really  both want to tgo to Maine for  lobster &a salad bar DINNER  outWink
  but  it's a long ride & gas is too high priced to afford that trip &  all the other things we've planned to buy or have already bought!!!!!!!!!!!!!!!Money mouth

I just took a pan of muffins out of the oven for morning snack.  I quickly made a pan of Rice Krispie Fudge squares.  They are great for summer as one doesn't need the oven.  I'll post the recipe on the Favorite recipe section.  Obviously they have chocolate in them.

Yesterday morning I FINALLY had my freezer's little leak repaired ..... FINALLY...... I've been putting it off since last autumn.  But that made my freezer empty. 
Yikes.  
I've been working steadily baking and baking and baking trying to restock.  It sure feels good to bake cookies.

I do enjoy/love making cookies and candy.   I've made some really nice batches of candy too.   Friday morning I'll be taking a load of stuff to the local police station.  It's the Memorial Day weekend and I take something to the city cops every holiday.  I love those guys.

I always enjoy reading your menus because you make some of the most interesting meals and reading them makes my mouth water!

Now I have a nice load of CANDY to mix with the cookies ...... I made a batch of my sugar spice pecans, Bakery1's incredible Cranberry Nut Bars (I use an assortment of dried fruits),  Nestlé's Smoky Almond Chocolate Bark and  Nestles Vanilla-Macadamia Nut Fudge.
This evening I'll make a couple batches of peanut brittle.  
All this stuff is going to make a nice gift for the cops.

When I make the great vanilla-macadamia nut fudge I end up with half a can of leftover coconut milk that costs so much.  I thought about making a second batch but ............
This morning I decided to make another batch but use lots of coconut and pecans.   I wonder if I used so much coconut it would be stiff enough to make drops instead of cooling in the pan to be cut.

Nancy, I wonder if you didn't want to use all the coconut milk right away if you could freeze the other half can.  Since the fudge is cooked it wouldn't matter if the texture of the coconut milk changed because of being frozen. 
I would think more coconut would make it thick enough to drop.  If not, you could always spread it.

Judy -- I phoned Thai Kitchen and asked about freezing the leftover coconut milk.  She said that was not recommended .  Now I just keep the leftover can in the fridge covered with foil or plastic wrap.  Sometimes I get it all used - sometimes I don't.
And, of course, this morning I didn't use it up ..... I was looking through recipes and found Island Cookies and Gingersnaps -- I haven't made either for so long so I stirred up those.
Lots of cookies but still a half can of coconut milk

I used the left over  coconut milk in a mixture of LOTS and LOTS of coconut and chopped dried apricots and pineapple.  Spoonfuls "dropped" very nicely onto buttered wax paper.  It's very pretty but tastes very plain.   It was a fun project but I will not use this combination again.
Because it's so very fast and easy I made a batch of Tiger stuff.  Now I'm finished. Finally - lol

Since it is supposed to rain tomorrow, I guess I'll have to bake.  We cannot be out of dessert at our house.  Of course I always have cookies in the freezer (not as many as Nancy though), so technically we're never out.
On this day we always had strawberry shortcake, made with biscuits.  It's my father's birthday and that's what he always wanted.  He would have been 102 today.  Unfortunately he only made it to 86.
Usually I had strawberried in my garden on this day, but they are late this year.

Glorious day here ............. I delivered the goodies to the police dept.  
Then I worked hard packing and storing all the leftover cookies in the freezer.  All the leftover candy is in the 'fridge.   I bought some nice broccoli on my way home and that will make that wonderful salad for dinner tonight.

I have been researching Red Velvet Cup cake recipes, as I want to make some for a pot luck party.  I downloaded at least 4 different versions.  Then I went to the grocery store and found a "Betty Crocker" mix.  I decided to try it out.  They were great, especially after I added Ina Garten's  cream cheese frosting.  I think I will go with the mix, and no one will know the difference.

I just took out of the oven the Nestle's ultimate Chocolatier chocolate cake.  I'll let it cool and make the frosting.  Frosting calls for heavy cream, but I'll use evaporated milk as I never have cream on hand.
