FOR NIKKI ANOTHER CHEESECAKE

Green With Envy Cheesecake Bars

1½ cups chocolate wafer cookie crumbs

¹⁄3 cup butter, melted

3 packages (8 ounces each) cream cheese, softened

1 cup sugar

1 cup sour cream

1 teaspoon pure peppermint extract

3 eggs

½ teaspoon green food color

Semi-sweet chocolate chips, for decorating

Instructions: Preheat your oven to 350 degrees.

Mix the cookie crumbs with the melted butter and press into a 9-inch square pan. (You can line the pan with foil or parchment for easy removal). Refrigerate until you are ready to use.

Beat the cream cheese and sugar in a large bowl until well blended, at medium speed. Add the sour cream and peppermint extract. Add the eggs one at a time, beating at low speed after each addition until just combined.

Pour half of the batter over the chocolate cookie crumbs.

Tint the remaining batter with the green food coloring and then pour it over the noncolored batter. Bake for 25-30 minutes or until set. Refrigerate overnight or at least 4 hours. Sprinkle chocolate chips over the top or melt it and drizzle over your bars. Store the bars in the refrigerator.

Nellie, you know me so well.  I might have to leave off the green food color for this.  It looks a bit much to me. 
I have copied this and put it in my cookbook rather than my binder where a lot of recipes get put then lost.

Nellie - Thank you for the delicious looking and sounding cheesecake bars recipe.  It certainly looks yummy and sounds like it would taste that way, too.

maybe less green  it is kind of bright

it reminds me of a dinner we had at work   we used any excuse to have one

on st pat's day i took a very large bowl of green potato salad (5 lbs potatoes)  and there were all the funny looks and groans and true yuks

but by the time i went to eat  it was all gone along with most of the other food, because the dept. head kept inviting others to see and they also ate

Thanks Nellie we like mint chocolate chip ice cream here so this sounds just as good.
