I'm trying to do more cookie baking, but right now my kitchen is off limits- I'm having windows replaced, so be at least a week before I get everything back in place enough to do anything.

As long as I had all the 'stuff' out I made two batches of new cookies ... the chocolate snickerdoodles and butter pecan cookies.   The minute the dough is cold I'll start baking.  That butter pecan dough smells SO good.

How fun for you to try one new recipe a week. I too wish I had that much time to cook, maybe this weekend. I usually cook sat & sun.
Your cookies sound yummy

lol lol -- John, I wish we lived nearer ..... I'd bring you fresh cookies at least 4 or 5 times a week!!

The Chocodoodles (a chocolate version of Snickerdoodles) is pretty good..... worth baking again.
The Butter Pecan Cookies are - WOW - great cookies.  The recipe makes just 2 dozen cookies and I can eat 2 doz
in one day ..... Ohhhh, ooops - I'm supposed to be making them for the kids at church.

BUTTER PECAN COOKIES
2 doz ... 375* ....greased ....8 to 10 minutes

1/2 cup plus 2 tblsp butter, softened and divided
1 1/2 cups coarsely chopped pecans
1/2 cup sugar, will be divided
6 tblsp firmly packed brown sugar
1 egg
1/2 tsp vanilla
1 1/2  cups flour
1/2 tsp baking soda
1/2 tsp salt

In a large skilled melt 2 tblsp butter over medium heat.  Stir in pecans,
cook 10 to 15 minutes until nuts are dark brown. Remove from heat,
stir in 2 tblsp granulated sugar (from 1/2 cup). Cool to room temp.
Set oven at 375.
Cream 1/2 cup butter and sugars until fluffy. Beat in egg and vanilla.
Sift flour, baking soda and salt into small bowl, add to creamed mixture.
Stir until soft dough forms.  Fold in pecans. Drop by tblsp onto greased
baking sheet.  Bake 8 to 10 minutes until edges are brown.
Cool on wire rack.  Makes 2 doz cookies.

Very good cookies ... Be careful browning the pecans ... Under 10 minutes at medium heat
I burned mine a bit.   Two dozen is a very small batch of cookies.  Next time I'll double this.

Irma -- Saturday and Sunday are the days I don't bake very much.  Saturday I clean my church - it's long, hard work.  Sunday morning I'm at church 10 AM, leave around 12:30.  I'm back at 5 to teach the "art class" for kids whose parents are in choir practice.  Church starts at 6 and gets out around 7:30.
lol lol Wednesday night is Bible study and the kids hit me for candy instead of cookies.

Carol .... I'm so concerned about the price of nuts that I've been stocking up.   I also have lots of cocoa, chocolate chips, unsweetened chocolate ... everything like that.    How can I continue my cookie baking if the prices continue going up??
Good grief - I don't need another cookie as long as I live.  I do need to continue baking and giving.
