BUTTER PECAN COOKIES 2 doz ... 375* ....greased ....8 to 10 minutes 1/2 cup plus 2 tblsp butter, softened and divided
1 1/2 cups coarsely chopped pecans 1/2 cup sugar, will be divided 6 tblsp firmly packed brown sugar 1 egg 1/2 tsp vanilla 1 1/2 cups flour 1/2 tsp baking soda 1/2 tsp salt In a large skilled melt 2 tblsp butter over medium heat. Stir in pecans,
cook 10 to 15 minutes until nuts are dark brown. Remove from heat, stir in 2 tblsp granulated sugar (from 1/2 cup). Cool to room temp. Set oven at 375. Cream 1/2 cup butter and sugars until fluffy. Beat in egg and vanilla. Sift flour, baking soda and salt into small bowl, add to creamed mixture. Stir until soft dough forms. Fold in pecans. Drop by tblsp onto greased baking sheet. Bake 8 to 10 minutes until edges are brown. Cool on wire rack. Makes 2 doz cookies.
Very good cookies ... Be careful browning the pecans ... Under 10 minutes at medium heat I burned mine a bit. Two dozen is a very small batch of cookies. Next time I'll double this.
