Need help adjusting a recipe for a different pan size.

I have volunteered to make a carrot cake for a First Communion Luncheon.
The recipe I have that I want to use calls for 2 round cake pans 10 inches in diameter.
I was going to double the recipe and I wanted to make the cake in a 13X9 pan so I would have 2 13X9 cakes that I would split and fill before frosting.
I am wondering if I could do the cake in a 1/2 sheet pan I think the size is 13X18.
Would the double batch of cake batter be enough for the 1/2 sheet pan? And would it bake high enough to split and fill or should I just frost it?

I think I would just make 2 13 x 9 cakes and frost them.

I agree with Barbara. Two 9x13 pans would be a certain result.

OK -- now tell me about filling a 9x13. Surely that's not inside a 9x13 ....... surely you mean between two 9x13s ??

My plan is to split the 9X13 so I have two layers. Fill the middle with a mousse, most likely a cheesecake or vanilla flavor then frost with the traditional cream cheese frosting.

I would use 2 -9x13 pans and just frost them. Splitting them ( though you could probably do it) would probably be pretty messy. I just bet they would be appreciated just frosted. Knowing my grand kids,when they had their 1st communion would probably not have paid any attention to whether the cake was filled. They were more interested in running around and being with friends and relatives!

To split the cake take a long serrated knife and cut through the cake. To make sure the cake is evenly cut place a row of toothpicks at the half way point and use them as a guide for the knife.
Slip a piece of cardboard between the layers and lift.
There will be crumbs but a light crumb coat of frosting will take care of that.

WOW .... I impress myself when I cut-up a pork chop.

Nikki - that does sound difficult. Maybe I could do that with an 8x8 sq or 9" circle but I can't even imagine doing it with a 9 x 13.
But the kids at school love "my" carrot cake. It sure would be fun to make a great filling for that 9x13. Use the whoopie filling?

Well the cakes are out of the oven. Good thing I used the two 13X9 pans. No way the batter would have fit into the half sheet pan. It would have fit but the cakes rose higher than the sides on the half sheet pan, unless because the half sheet is a bit larger it would have made the difference. I will never know.

I called the young lady that I am making the cake for and asked her if she wanted the cake filled or not and if she wanted filled with a fluffy white filling a cheesecake filling or just the cream cheese frosting between the layers. She has decided that she wants the frosting in between so I will not have to make another filling just a double batch of cream cheese frosting. I would have gone for a filling that was different than the frosting but that's me. Then again I'm not 7 years old. I think she thought there would not be enough frosting!
If I can figure out how to do it I will take a picture of "my masterpiece"

Nikki, do post your photos. My older sister takes photos all the time of her kitchen creations, but I never think about it until it's too late.

And I was thinking the same thing about the batter overflowing had you used the sheet pans. I made a carrot cake for Easter and it looked like too much batter for my 9 x 13 pan, so I made 4 muffins. Worked out fine.

Gee, all the posts about the carrot cake has me drooling, I would bake one today, but it is going to be hot & humid( 86 with storms). Looking forward to seeing the photo.

I have a bit of "bad" news for little Ali. I can't split this cake. I tried making a cut and the carrots are like yarn holding the whole cake together. If I had done a better job in clearing out my freezer I would have tried freezing it for a bit to make it more firm for slicing. I might try it again now that it sat overnight but I am not going to get my hopes up...

.
So it will be just a frosted cake. I shouldn't say just.

I do have a slight problem now..... because of making this cake my Grandson wants one this weekend so he can have some. He wants to make one for his Mom for Mothers Day and my best friends daughter wants one for her birthday in 2 weeks. Good thing I got the carrots at Costco in the 10 pound bag! (Each cake calls for 6 cups of grated carrots.)

Oh Nikki - I thought "I" was the one baking all the time.

I have apples in my 'fridge but only a tiny bag of tiny carrots. Maybe I'll just leave my oven Off today.

I find that baking relaxes me. At this point I get so stressed that when I can get into the kitchen and bake I relax. It is even better if I get my Grandson involved. I can't wait until my Granddaughter wants to bake with Grandma.

nikki and every one----if you have this problem again------just fill the recipe size pans with water to the point the batter should go and pour it into the different pans and see which is better------my 1/2 sheet has a higher side---------is yours possibly a jelly roll pan? ---they are 1" high-------also if it is slightly too much as verlee says make a couple of muffins for your own treat
