Hi Grace, I have eaten my share of cheesecake but never mint,that does sound good.Did it have a chocolate cookie crust ? I think that would be really good too.

I have made some baked cheese cakes but they were plain,with a graham cracker crust and then I put fresh fruit,like strawberries,or canned blueberry pie filling on top.I also make a no bake cheesecake the recipe is on the back of Knox gelatin.I like to take those to get togethers,I use the already made graham or cookie crust,I wash off the cover of the pie crust and turn them right side up and use that as a lid for the cheesecake for transporting.Just off the top of my head,why couldn't the no bake cheesecake have some mint chocolate chips added and use the chocolate cookie crust.Top it off with some shaved chocolate as a garnish.I always get compliments on this cheesecake everyone seems to really enjoy this and it's super easy.

I just love cheescake! It would be great if you could post the recipe for the mint cheesecake. Definitely would have to try that one.

well, rats...... I wanted the CHOCOLATE crust. Of course my WalMart doesn't carry that. They have the regular graham cracker stuff and I bought that. With the current price of gas, I'm actually trying to avoid going to the bigger stores in the neighboring town.

I even looked for some plain chocolate cookies .... I'd crush my own if possible. I want chocolate with mint.

Hi Nancy,now you know your cookies would be better than store bought.I wanted to make a pumpkin bundt cake and it calls for a store bought yellow cake mix and of course I didn't have one so I made my own,no butter milk either,made my own by adding 1 teas. white vinegar to 1 cup of white milk to sour it..I think I'm going to have to bake it just a little bit longer.

Gale - All my chocolate cookies are soft and chewy. Should I bake those a minute or two longer to get cookies I can crush?

Hi Nancy, I suppose you could just take care not to burn them.Are you going to make the cheese cake on the back of the Knox gelatin ? That one is easy to make,you shouldn't have trouble with it.

I'm sort of losing my ambition to make any cheesecake. That's so much work and expense for somebody like me who worries about the end product and the amount it costs. I'm pretty good with cookies but sure not too successful with other things.

Hi Nancy,don't be so hard on yourself I've been cooking and baking for over 40 years and I finally mastered pie crust not too long ago,you should try the cheesecake on the Knox gelatin sometime.It's very easy just make it plain and then experiment later.I know what you mean about expensive everything keeps going up and up except our pay checks.Thank you for noticing my litle Rocky's picture,that little guy is so special to me he is 15 years old and he isn't well .The Vet wanted me to put him down last winter because I refused treatment, I told him I would get him to drink and eat and I was able to do that.He was diagnosed with lymphoma.I don't believe in treatments like surgery on a senior dog like that.I told him I would take him home and I would bring him back if he was in any pain, he's been doing OK just not getting around like he used to.I told little Rocky I didn't want him to go and he listened to me.He may not make it through the winter but at least he had an other year with me and I'm grateful for that.

Gale - what a touching story. You are so fortunate to have Rocky and he's fortunate to have you.
My last cats - Jingle and Belle both developed kidney failure when they got old ... Belle hit 18 and Jingle lasted until 20.
I was never going to have another cat.
