   I noticed in another forum people having problems with Meringue.I found this article awhile back.This might just help answer some of your questions and solve some problems.

Thanks ...... I've added that to my Favorites in Cooking but I imagine it will be a long, long time before I make meringue.
(hee hee -- I WILL beat egg whites for divinity -- does that count?)

Ok Gale...I will at some point give it another try.  I will keep this link in mind and as a matter of fact I have the website written next to my recipe of choice. And I have it written on my Pie Cookbook.

GRANA  here;
I too had trouble w/ merengue until I learned that egg whites beat into stiff peaks faster if you  start w/ room temperature egg whites; unlike cream which needs to be beaters & bowl  too)
 well chilled to achieve a high volumn whipped product.hope this helps?

Oh you are all very welcome.My Mom was an awesome baker but Mom's no longer here so I have to rely on others tried and true measures.Awhile back I made a lemon meringue pie and the meringue was crawling away from the sides so I found this article awhile back and saved it.I buy lemons often and I don't like to waste so I make lemon squares and once in a great while pie.

After posting  the question about weeping meringue, I found that many bakers were having the same problem.   So glad I asked!  Can't wait to make a chocolate meringue pie for our Thanksgiving dinner!

Gale,  Thanks for the meringue link!! My Dad's favorite pie was coconut cream
with meringue on top. I have my Mom's recipe for it but it says on the recipe,
put meringue on top, and nothing else.  lol lol She made it so often that she
never wrote how she made it!

I know what you mean Carol.I have my mom's Walnut torte recipe you see the ingredients and the recipe with directions then on the very bottom it say's P.S. I use Jumbo eggs.Thanks mom! When were you planning on telling me.I'm so glad I spent so much time with her in the kitchen helping her otherwise some of these things would be so difficult to make.

Gale,  None of my Mom's pie recipes have any oven temp. either.  lol lol Going thru her recipe box
brings back so many great memories of her. Some of the things that she made, she never had a
recipe for it!! I'm lucky that I spent a lot of time in the kitchen with her. We talked about her recipes
a lot before she went to the assisted living home. I'm so grateful for that!!
