Menu suggestions.

A friend of mine is having a birthday soon.  He has never tried scallops.
I have invited him to dinner and I told him I would make scallops.
Problem is I am not sure what to make.
I could take the easy way out and make bacon wrapped scallops and serve them with pasta.  But I would love to get some other ideas.
Oh, he can not tolerate dairy in quantity. A bit of cheese would be alright.  That makes me lean towards a seafood Risotto. Or I could go more "southern" and do a version of shrimp and grits.
Any suggestions would be welcome. Thanks.

Our family enjoys this scallops recipe:

Garlic-Lemon Scallops

3/4 cup butter
3 tablespoons minced garlic
2 pounds large sea scallops
1 teaspoon salt
1/8 teaspoon pepper
2 tablespoons fresh lemon juice
pasta of choice

Melt butter in a large skillet over medium-high heat. Stir in garlic, and cook for a few seconds until fragrant. Add scallops, and cook for several minutes on one side, then turn over, and continue cooking until firm and opaque.


Remove scallops to a platter, then whisk salt, pepper, and lemon juice into butter. Pour sauce over scallops and serve with pasta.

Hubby & kids love shrimp & I try once a year (for over 40 years) & hate to say this, but I chew & end up disposing in my napkin. I have tried breaded (love the smell), cocktail, in eggrolls (I end up pulling the little things out & giving to hubby), at a seafood place, while in Florida, New Orleans, California, Maryland & other states. It does not matter how they were cooked or where, I can not bring myself to eat shrimp, the same with scallops (forget oysters, I con not look at them), BUT I could eat crab legs & lobster a few times a week.  Just in case your friend does not like the scallops, play it safe & have a dish he can eat.

I am going to try Verlee'  recipe without the scallops, the sauce sounds good for crab or lobster pieces

Thank you very much.  I had pretty much decided on a recipe like this but I was going to use rice or orzo.  I may rethink it and do the pasta though.
I also found a recipe in a recent Food Network magazine for an Asparagus and Cheese Tart.
I called our friend and asked if he can have cheese and apparently he has no problem with cheese.
Because of the tart I was leaning to the orzo or rice.
He has requested a Flourless Chocolate Cake for his birthday cake so I wanted to keep dinner a bit lighter.

I think the sauce from your recipe would go well with either the rice or orzo what do you think? (I will tell you I have to cut WAY back on the garlic, it does not like me much)

This is something I order when we go to Carrabba's " Spiedini di Mare " (Grilled scallops and shrimp)

http://www.mangiabenepasta.com/shellfish_crustaceans.htmlIf     If using wooden skewers soak them in water for about 15 20 min before putting the seafood on them. I have even used rosemary as skewers,strip off the leaves off the branches or stems not sure what to call them and skewer the seafood on the branches.you can chop the leaves and use in something else or dry them for another time.
There are alot of other nice seafood recipes on this site.
Be careful not to over cook the scallops they will get rubbery.

I'd prefer the bacon wrapped scallops best & if he doesn't know that he likes them, the bacon will absorb most of the taste.  2nd favorite is grilled  scallops. Orzo on the side is a nice treat

This is my other option for cooking them.  I still think they would go well with rice of orzo.  After all what's not to like about bacon?!
I figured I would pre cook the bacon to get rid of most of the fat. 

But scallops taste so good that just broiled they would be good. 
Since I plan on doing  the asparagus tart I think the bacon might be over powering.

Verlee,  Thank you for sharing your recipe. I have printed and will sub shrimp
for the scallops. Hubby can't eat scallops. I would love to do the scallops for
myself and pig out on them but I'm on this diet and don't want to gain any
weight back!!

I thank you all for your great suggestions.
I will do the Asparagus Tart, I just took the Flourless Chocolate cake out of the oven.  The scallops I do think I will wrap them in bacon and broil.  And I have pretty much decided on Orzo. (although butter and lemon go so well with orzo ....well I have time before I have to make up my mind..)

Final report on dinner.
Menu:
Bacon wrapped scallops
Wild Mushroom Risotto
Cheese and Asparagus Tart
Flourless Chocolate Cake.
Everything was absolutely phenomenal. I don't think I could have had a better meal from a restaurant.
I decided on the bacon wrapped scallops because I figured the bacon would go well with the mushroom risotto.
