Any meatless meals you would care to share?

This just isn't for those of us who observe Lent but anyone that cares to cut their grocery budget or just cut down on meat consumption.Throw some ideas out there maybe we haven't thought about.Thanks

Tuna Melts: 2 cans tuna, 6 oz. 0% Greek Yogurt, diced celery to taste, chopped walnuts to taste, wheat bread. These are quite healthy, low in fat and calories, and taste yummy.

Thanks Verlee,we love tuna in our house I will try this.I usually do a basic tuna salad.Tuna,mayo,celery and onions.I didn't have onions the one time and I wanted some more bulk in the salad and I had radishes so I added those in place of onions boy was that good.Now I always add them.When I'm low carb dieting I use either low carb wraps or just wrap whatever in a big piece of lettuce.BLT's are great this way.

Shred a head of cabbage fine and thinly slice a large onion and saute in butter, margarine or olive oil, till limp and soft.  Add cooked noodles or gnoochi and serve,  Called halusky or fried sweet cabbage.

LOL LOL -- Bread is the staff of life. 
I rarely eat without bread.  I have a slice of bread along with a BLT!!  joke - but I do love bread.

Grilled cheese & tomato soup is my all time favorite (for at least the past 50+ years!); but I am anxious to try some of your other ideas.  Great job, Fran!

I forgot to add tuna melt, shrimp, tuna salad stuffed in a tomato or bell pepper, or a large salad with cheese, grapes, cucumbers, eggs & whatever else you want to add.

Have you heard of stewed tomatoes creamed with chunks of bread in them  my Mom mad e this  when we had stamps during the war.

I make this also, this is definitely Eastern European.I use 2-3 onions chopped small ,grated 1 head of cabbage and noodles or potato dumplings.I fry the onions and cabbage until well carmelized in butter and canola oil,salt and pepper to taste.Stir in wide egg noodles(Galuska), or plain dumplings called (Nokedli ) or homemade potato dumplings(Cepelinai) after the cabbage is cooked.In Hungary this is know as Kaposzta Galuska or Cabbage and Noodles.I love this and it's awesome paired with homemade fresh Hungarian garlic sausage.This is in my top five favorite meals.My oldest son makes this to take to Church dinners and everyone loves this.It's always requested at our block parties.This is a great meatless meal minus the sausage We also cook wide egg noodles,drain and stir in enough butter to stop the noodles from sticking together,add small curd 4% milk fat cottage cheese just to warm it up then top with crispy fried bacon bits.Well this isn't meatless but well worth exploring at another time.

I like bread too,a little too much!That's why I low carb diet every once in awhile.Bread just sticks to me everywhere,the middle the rear you get the picture lol lol lol !!!

My sons and I love this meal also,hubby doesn't.What's wrong with him? lol lol lol  He always wants tuna salad when we have this.

 omeletes( any meatless filling)
SALAD  NICOISE:
 salad  w/ hard oiled egg slices/wedges; tuna chunks; potato salad &   green beans wFrench ressing
 minestrone soup( Italian veggiesoup w/ chickpeas OR  white  or red kidney beans; pasta shapes
 nice w/ pizza or garlic toast

Thanks for some more great ideas Fran.I forget when I need meatless meals then I'm running around trying to think of something.Hubby is a meat and potatoe guy,not too many meals without meat.lol lol lol

Hi Mary,I have had Italian bread salad before and this is very good is this like that? Boy eveyone is coming up with good ideas.Like I say when it time to have meatless meats everything just goes right out of my head.

 minestrone oup (Italian veggie soup w/ chick  peas; red r whitekidney  beans,pasta shapes. Sprinkle w/ grated parm/omano chees serve w/ garlic oast or pizza
 SALAD NICOISE
  mixed greens topped w/ hard biled egg slices/wedges; tuna chunks, green beans, tomatoes & potato salad or cubes/dice/edges,Serv / "old fashioned" French dressing
 anypastaw/ meatlesssauce& Italian cheese baked in a caserole.
Hummous w/pita bread
remember peple in ost other countries  eat less  meat than we o & many International recipes/dishes are meatless !!!!!!!!!!!!!!!!!!!!!!!!!

Mary, thanks for the reminder about the stewed tomatoes. My Mom would brown the bread in butter, and then add the stewed tomatoes. yummy

Halusky refers to the potato dumpling noodle that is pushed through a sieve like pan into boiling water.

Ok here are the Dumpling makers or Spaetzle makers that Maxine mentioned.I own both syles,there are more but these are probably the most popular.My mom never owned one she would cut hers from a flat plate one at a time each and everyone small and uniform in  size.She cut them with a table knife or spoon dipping them in the boiling water to make sure they would not stick to the plate or utensil.Well let me tell you I don't have time for such nonsense.My mom would yell at me saying that mine were big enough to choke a horse.So when my dear old aunt Rose started getting rid of things she gave me hers.lol lol lol .God Bless dear old Aunt Rose! Now mine look like Mom's without all the work :)

I'm sorry Carol I did a switch on you.A better picture, which do you have? That sounds good with the Swiss and butter.I'll have to try that.My oldest son loves dumplings one day I felt ambitious and sent him home with a gallon size freezer bag full to the top.When I make chicken paprikash I have to make a lot of gravy.He likes a little chicken with his gravy and dumplings
