Tomorrow we are having,cheese quesadillas and guacamole.I got a great deal on avocados @ .49 cents apiece at Aldi's We have to eat these quick so I can go back and buy 6 more before the sale ends! lol lol lol

we go  "meatless at least 3 days  a  week( we both prefer the different  International style dishes/ which  are   often meatless in their Oiginal Versions.!
 An easy one to make is  a rich hearty  chili non carn([chili w/o meat].Simply make  your  usual chili w//o the meat  I use minced celery;  minced onions. diced tomatoes, crushed tomatoes;  1 cup each cooked red  red beans &  cooked black beans( both drained)spices asdeired( your own blend or a pkt of chili seasoning mixTo one quart of chili;  add1-2cups extra  water) & 1 cupTVP (Texurized Vegetable protein( soy product ground meat replacement;  & simmer, stirring every 15 minutes  till  it expands,  taking on  the look of cooked ground beef.Any unused dry TVP should be packed into an airtight container (zip loc bag) & frozen up to 2 months.Then the next   time, j ust use the same way as the first time. I use this  product in pasta sauce( w/1/2 quantity of extra  water( 1/4 cup  water to 1/2 cup  dryTVP = the same protein rtein( 24 gm [ as 1.5  # of lean ground meat]No fat to drain or cleanup from your stove top .
If yourchili seems too thin n; make a slurry of  cornmeal & a lltle  cool water.Add to simmring chili which will thicken up as it simmers  longer, stirring every 15 minutes till thick, rich & "meaty"
( Texurized VegetableProtien) is sold in health food stores, whole grain bulk  stores( made byBob's Red Mill lor ADM( Archer Dniel Midland; sold in your  grocer's healthy foods aisle for about $5 a (10oz bag) = 2# of  lean ground  meat.
BOCA  or ther /vegetarian burgers; are meatless( come frozen)and maybe skillet or microwave cooked. Serve on a bun w/your  usual burger fixins
Frozen breaded  crispy baked fish filets w/tartar sauce on  aburger bun.
Or how bout fish stick tacos  ?

Thanks for some good ideas,I was thinking last night ,yes once in awhile I do think,My son and I love eggplant parmesan,no meat.I started making it at home last year,no one else ate it so I always ordered it out.I talked my son into eating it and he now loves it,hubby won't eat it,good more for us.lol Does anyone have a good recipe for any other eggplant dishes? I would love to hear about them

grilled cheese & tomato soup

fish dinner

fish sandwich & fries or onion rings

tuna salad (sandwiches, stuffed in celery, wraps)

eggs (omelets, scrambled sandwiches, frittata, fried)

Spaghetti with meatless sauce

Pizza or pizza bread (no meat but lot of vegs)

nachos (no meat but lots of onions, peppers tomatoes & cheese)

Wow!  What I wouldn't give to have a big bowl of ice cream with all the same toppings!!
Lucky I don't have any ice cream in the house or I would be having a big big bowl! lol lol

gale---there's a recipe in today's paper for  a barley risotto with buttrnut squash

Thank you all for sharing your ideas,I really like yours Nancy! Ann and Nellie,I would love to have those recipes.I saw the veggie lasagna,we like that I'll have to check into that.I have to say the Tuna noodle casserole on this site is wonderful,very tasty! I sent some home with my son and his MIL loved it she had two helpings and my son said that she never takes seconds.:)

Nellie, I'd like that one.  I love barley and just happen to have a butternut squash handy.  I make lentil soup frequently which is fairly quick  to make and pretty easy.  I also use TVP in chili and spaghetti sauce.  It "chews" like meat and you really can't tell the difference.

RATATOUILE-seves 4-6 over rice/ pasta or baked potato HALFA mediteranean- french vegetable stew[ meatless] or add fully cooked ( leftover) chicken small cubes/shreds OR 1 cup extra firm tofu dice in last 15 minutes of cooking time.INGRDIENTS:1-2TBS olive OR canola oil1 medium- large onion, peeled & coarse chop or diced( about one cup)1 eggplant; peeled( if desired) & diced1/2" ( about 4 cups)peeling not necesary but do so if you wish, I do not peel my eggplant. 1-2 zuchini-diced or triangle cuts about 1/3" wide10-20 "common"/button mushrooms; quatered1 bell pepper ( any color) ; seeded, rinsed& diced, about 1 cup OR use frozen diced bell peppers;an 8 oz bag costs less than $1 & contains about 2 cups, ready to use.Pkg tightly & freeze remainder for another use2-4 cloves garlic, peeled & minced fine (1-2 tsp)1 28 oz can crushed or diced tomatoes w/ liquidsDRY HERBS1-2tsp dry parsley flakes OR 1-TBS fresh parsley, finely chopped1 tsp Italian seasoning mix*********** 1) ( small-medium) bay leaf*************optional: 1 pinch crushed red pepper flakes more or less to tasteoptional: 1/2-1 tsp fennel seed fora sausage like flavor in dishoptonal 1/2-1cup cooked chicken cubes or firm TOFU in 1/2" cubesOPTIONAL grated parmesean cheese to spribkle on top of ratatouile on dishes/plates***********REMOVE ***********BAY LEAFf*************BEFORE SERVINGand discard itDIRECTIONS:HAVE ALL INGREDIENTS READY ( this recipe goes pretty fast in the first stages of preparationcut all veggies into about = size pieces & keep each in suitable sized bowls till needed.In wok , large skillet or Dutch oven , heat oil.& pepper flakes( if using );Add veggies( garlic last to prevent scorching it) , stir-frying each for 2-3 minutes in turn.( Add garlic last to prevent scorching it)Add canned tomatoes . w/ liquids & all herbs.Stir, cover & simmer one - two hours, till all veggies are tender.Adjust seasonings to taste.REMOVE ***********bay leaf*************BEFORE SERVINGServe over cooked spaghettii or other cooked pasta or over a baked potato OR over cooked rice. & ENJOY!
