This just isn't for those of us who observe Lent but anyone that cares to cut their grocery budget or just cut down on meat consumption.Throw some ideas out there maybe we haven't thought about.Thanks

Gale,  Mine is the one on the bottom. Your son is lucky to have such a great Mom.

Chicken Paprikash: I have a catalog from Penzeys Spices and they have 2
Hungarian Paprika's. They have Sweet Kulonleges and Half-Sharp.  Which one
do you use in the chicken paprikash? Do you have both? Which one do you use
the most? Sorry for all the questions!!!  Could you please help me??? I would
like to order some but don't know which one.  Thank you Gale.

I like that style better than the crank type.For me it's easier going back and forth than cranking.I just love to cook and bake and make people happy,that's what makes me feel good.Ok the only brand paprika I use is Szeged Hungarian paprika (SWEET).My older son and hubby do not like spicy food so I keep red pepper if anyone wants it spicy.This is available in our grocery stores,check your store.I'm more than glad to help you Carol.Anything you need to know about my recipes please feel free to ask.I was talking about fried cabbage and noodle and when we shopped today I bought three heads! lol. Now I'm hungry :)

Gale,  Thanks for the info on the paprika.  I have never heard of the Szeged
brand.  I've gone to several stores and could not find any Hungarian Paprika.

-seves 4-6 over rice/ pasta or baked potato HALF

A mediteranean- French vegetable stew[ meatless] or add fully cooked ( leftover) chicken IN SMALL CUBES /SHREDSll cubes/shreds OR 1 cup extra firm tofu dice in last 15 minutes of cooking time. Pkg extratofu in a contsinrcoveredw/ wate( change it daily& refrigerate for another use

INGRDIENTS:1-2TBS olive OR canola oil1 medium- large onion, peeled & coarse chop or diced( about one cup)1 eggplant; peeled( if desired) & diced1/2" ( about 4 cups)peeling not necesary but do so if you wish, I do not peel my eggplant. 1-2 zuchini-diced or triangle cuts about 1/3" wide10-20 "common"/button mushrooms; quatered1 bell pepper ( any color) ; seeded, rinsed& diced, about 1 cup OR use frozen diced bell peppers;an 8 oz bag costs less than $1 & contains about 2 cups, ready to use.Pkg tightly & freeze remainder for another use2-4 cloves garlic, peeled & minced fine (1-2 tsp)1 28 oz can crushed or diced tomatoes w/ liquidsDRY HERBS1-2tsp dry parsley flakes OR 1-TBS fresh parsley, finely chopped1 tsp Italian seasoning mix*********** 1) ( small-medium) bay leaf*************optional: 1 pinch crushed red pepper flakes more or less to tasteoptional: 1/2-1 tsp fennel seed fora sausage like flavor in dishoptonal 1/2-1cup cooked chicken cubes or firm TOFU in 1/2" cubesOPTIONAL grated parmesean cheese to spribkle on top of ratatouile on dishes/plates***********REMOVE ***********BAY LEAF*************BEFORE SERVING and discard it

Tuna Melts: 2 cans tuna, 6 oz. 0% Greek Yogurt, diced celery to taste, chopped walnuts to taste, wheat bread. These are quite healthy, low in fat and calories, and taste yummy.

I just noticed your recipe, I have not seen 6oz tuna for a few years. It was one of the items I noticed was smaller when I was making tuna salad (I always use the same bowl to mix it in )& when the kids were here I used 3 cans, since it is just the 2 of us, I went to 2 cans & I would have a little left for hubby to have for lunch. Well we still eat the same way but no tuna left so I checked the cans & found out they were 5 oz.. When I went to the stores I checked every brand at all 3 of them & found a few 6 oz  but all new ones were 5 oz.. Two oz. does not seem like much to lose, but in tuna it is noticeable. Do you remember that a can of tomato soup would fill 2 bowls with a little left & cost $ .29?  Now 1 can fills 1 bowl & goes on sale for $ 59. My mom use to tell me that she bought bread for 5cents, I tell my grand kids that I would buy bread & hamburger buns for $ .25 & they just grin.
P.S. I made tuna salad Fri. & used 3 cans so hubby could have some for Sat. lunch &  2 cans of tomato soup (1 bowl for each of us)
He likes tuna melts, but not nuts & I do not like heated tuna, but I do make him the melts now & then. I will have to try with the yogurt & nuts, in the summer I will add red seedless grapes to mine, so the yogurt & nuts sound good to me.

I love making Rattatouille.  I serve it with couscous it does a great job of soaking up all the wonderful flavorful juices.
I often make a stir fry using extra firm tofu.  I dry the tofu a bit first then sauté cubes of it in a bit of olive oil with a sprinkling of red pepper flakes.  I add frozen mixed vegetables and then a sauce.  Could be any "Asian" sauce I pick up. 
The other favorite meatless meal I do is browned potatoes.  Sometimes I boil them a bit first sometimes not.  I fry them with some onions until the potatoes are browned and tender then scramble a few eggs into the potatoes.  One pan.  Easy, tasty. My husband like this as do I but I don't make it often for myself.  I will sometimes make myself a big salad when he has the potatoes.  There is no way he would be happy with "just" a salad. Although my salads are far from just a salad.

Thanks Ann for sharing this recipe my son and I love eggplant.I don't peel the eggplant either it helps hold it together and I'm sure they are a lot of vitamins that would be lost if peeled.I plan on making this soon.Thanks again.

Thanks for the ideas Nikki,I love tofu.I order it often when we have Chinese.I add a lot to my salads when just having a salad.We have salad with our meals most of the time.Tonight I skipped salad because we had corned beef and cabbage.

Hi Ann,I'm going to try this soon the last trip to the store there weren't any eggplant at either of the stores we went to.This is probably good. Now when they get them they will be super fresh.Thanks for the laugh about the vegetarians.Smile
