I'm looking for a recipe called Company Chicken.it was dredged in seasoned flour and fried then baked in a creamy tomato sauce.from what I remember there was  tomato sauce or tomato paste ? evaporated milk,onion,celery,bay leaf,salt and pepper.Served over rice not sure if the rice was cooked in with the chicken.This is an old recipe I'm thinking 75 years old maybe older.This was the first meal I made for my family when I was 9 years old.I found it in my mom's recipe box.She had a kitchen down the basement and I went down there and made this.Mom and Dad were very proud but with all the moving this recipe was lost I sure wish I had it.I'll probably try to recreate this recipe but it sure would be nice if I had the original recipe.Any help would be appreciated Thanks.

sounds similar to a recipe i've hunted for yrs
my g.m. made something similar  but no tomato  she cooked it in the oven,  she called it                      'smothered chicken'   and at burgheim's pharmacy's lunch counter in houston   it was their lunch special on thursdays     and if you didn't go at 11 am you didn't get any
but you'd think i could find the recipe

Nellie I have research every avenue I know to find this recipe.I might be able to make it from memory but at the age of 9 and I'm 55 now thats really asking a lot from my memory. lol What are the ingredients in the chicken dish you are looking for? This company chicken was baked in the oven also after it was put together.I might get some chicken breast skin on bone in and try to make this in the crockpot.All I know it was really good.I've been cooking and baking since I was nine years old by myself and even earlier with my mom.I just love food!

This reminds me that I have been looking for a recipe for a salad that calls for cooked cold spinach I think it is from an other country then here in the states but I have had no luck. Sure hope someone can help.

I found 2 that sound like you might be able to re create the one you are looking for.

All Recipes search for Easy Company Chicken.  I think that one called for curry but that could easily be left out.

Cooks.com has a Company Chicken Stroganoff that sounds pretty good.

Let me know if either of these works...but I am sure you have tried the same searches .  Good luck in your search.
 I bet that your memory is making the dish better than it really was..at least tell yourself that if you can not find the recipe.

Hi Mary is it a creamed spinach served as a side dish? I'm Hungarian and we make a cream spinach dish

I found this recipe in my copy of Farm Journal's Country Cookbook.

Company Chicken

2 (2 1/2-3lb.) broiler-fryers
1/2 c. shortening or salad oil
1 1/3 c. chopped onions
1 qt. block frozen Home-cooked Tomato Sauce (see index)
2 tsp. salt
2 tsp. garlic salt
1 c. apple juice
4 tsp. lemon juice
2 c. water

Brown chicken pieces in hot shortening in skillet.  Pour off fat.  Add onion and cook over low heart until golden.
Add chopped or thawed tomato sauce and remaining ingredients.  Bring to boil; cover.
Simmer 34 to 45 minutes or until chicken is tender. 
Makes 6 servings.

I know it isn't exactly as you describe the original recipe you remember using but it's close!  With a few adjustments I think it might work!

Thanks everyone for all your help.I'm going to try and make this from memory.There are just so many company chicken recipes.out there.I even checked with my nieces thinking it was my sisters recipe,she is 21 years older than myself.She left behind her recipe box when she got married and I used to go through that box all the time but it was lost.:)

Good luck Gale!  Let us know how you make out!  I always try and have a paper and pencil close by to write down exactly how I make it each time because I can't rely on my brain to retain!

I know what you mean I forget everything.This time when I make it and if it turns out how I remember it I will write it down.So many of the things that I cook and bake are not written down and I'm trying to write these things down for my boys or they will be lost forever.Thanks

I am bad about writing things down too.  I will be cooking something and see a bit of a leftover in the fridge & thow that in too.  Later on, who can remember the "special" ingredient??   LOL
