After Thanksgiving most of us will have leftover turkey I was wondering what all of you do with your lefttovers.The day after Thanksgiving I always chop the turkey into small pieces and some of the stuffing and it goes into gravy and heated the poured over biscuits.I always make a ton of gravy because my family loves it.I make turkey carcass soup and turkey salad for sandwiches.I would love to find a recipe for turkey tetrazinni if anyone has a good recipe or any recipe that uses leftover turkey.I hope all of you have a fantastic holiday filled with love and happiness.♥
Other than sandwiches I always make soup but that is the last thing that gets made.I have always made a creamed turkey I toss in some of the gravy and most of the left over veggies and thicken it up to serve over toast, leftover biscuits or leftover mashed potatoes. That was always a request from my husband. Probably will not be making that this year.My favorite though is a revision from the original recipe. The original called for chicken.Turkey and Mushroom Stuffed ManicottiFilling:1/2 pound mushrooms chopped, ok to include stems.2 Tb butter2 Cups chopped turkey or chicken1 tsp grated lemon rind1/2 tsp salt1/8 tsp pepperSauce:6 Tb butter6 Tb flour2 Cups milk1/2 tsp saltpinch of pepper1 Cup milk, original recipe calls for cream1/3 Cup grated Parmesan cheesePrepare package of manicotti as directed on package, slightly under cook by 1 or 2 minutesHeat oven to 350 degrees F.Sauté mushrooms in butter until goldenOff heat mix in turkey, lemon rind, salt and pepper.Mix milk or cream with white sauce.Stir about 1/3 to 1/2 cup of the white sauce into the turkey mushroom mixture.Spoon filling into manicotti and arrange in pan.Sprinkle with cheese and top with remaining white sauce.Bake uncovered 1/2 hour then brown under broiler.I have also add a chopped onion with the mushrooms I think it adds to the flavor.
