I like to fry up hash brown potatoes and add onion and red pepper, diced. Then near the end I add chopped ham and cover with cheese and let it melt. Sometimes I even put a little sour cream on mine, the boys think I'm nuts for that!

A quiche is always wonderful or really creamy scalloped potatoes, yumm!

What a lot of great recipes! Thanks to all of you. I haven't even thought about what to do with the leftover ham yet lol. But I did make grilled ham and cheese sandwiches with very thinly sliced ham.

This is SO good and it would be a great way to use the ham scraps and bone. (I never have a ham bone so I use chunks of boneless ham or small bone-in ham slices -- whatever I can get) HAM AND CABBAGE SOUP (it doesn't look or taste like it sounds) 1 meaty ham bone or 2 large ham hocks About 6 cups of water -- (I use canned chicken broth) 1 (16 oz) can whole tomatoes (I buy the already chopped tomaatoes) 1/2 tsp dried thyme, crushed 1/2 tsp dried marjoram crushed 1 large onion chopped 1 cup diced carrots 1 cup diced potatoes 3 cups shredded cabbage salt and pepper to taste Put ham and water in a stock pot. Chop tomatoes and add along with their liquid. Add thyme and majoram. Bring to a boil, lower heat, cover and simmer for about 1 1/2 hours or until ham is falling off bone. Remove ham and set aside until cool enough to handle. Add vegetables*, except cabbage, simmer about 30 minutes or until vegetables are tender. Meanwhile remove skin and bones from ham and cut into bite sized pieces. Add to pot along with cabbage. Simmer 25-30 minutes or until cabbage is tender. Season with salt and pepper. Makes about 6 servings. This freezes very well - I always double the recipe and freeze in heavy plastic bags. *I save all my leftover veggies in a jar in the freezer. I dump those into any soup I'm making.

Hi Nancy, my niece made a soup very much like this one and she told me it was excellent.They don't like thick soups like bean soup so this was a good alternative I will have to try this one.Thanks for sharing.

It's hard to get my kids to even try anything that looks like a casserole or eat leftovers. My Grandmother made this for me when I was younger and I thought I would give it a try and would you believe they LOVED it!!!

Macaroni and Ham Casserole-
1c elbow macaroni ( I use spaghetti noodles instead)
2 tbsp butter
2 tbsp flour
2 c milk
1 tbsp worchestershire
8 oz ham -cubed
8 oz grated cheddar cheese - I use more cheese just because we love cheese :)
3/4 c bread crumbs-fresh or seasoned-I have even used croutons
Cook & drain macaroni. Make a white sauce with the butter, flour and milk. Stir in worchestershire, macaroni and ham. Turn 1/2 of the mixture in oblong 2 qt. baking dish. Layer with 1/2 cheese. Add remaining mixture and layer with the remaining cheese. Sprinkle with bread crumbs. Bake @ 350degrees about 20 minutes or until crumbs are golden brown and sauce is bubbly.
I have found that this is much better after it has sat for a while (the sauce thickens) and even better as a bake ahead meal for the next day.

I freeze the left over ham and just warm it with other things,either potatoes, rice, bread, veggies, etc. I give the ham bone with meat on it to one of my brothers. He makes bean soup with it.

Split Pea Soup with green split peas. That is the only way that I know. My Mom always made
Dutch split pea soup. When they have tulip time in Holland, MI they alway sell Dutch split pea
soup with the green peas for all the tourists. I have never tried the yellow peas. When I go to
Sprouts on Wed, I will check to see if they have the yellow ones in the bulk.

you should check the store now for "leftover hams"

i have purchased the spiral sliced halves which are my fav as low as .79 lb. at my Krogar many times and tell the butcher that i live alone he will cut them in half for me ----------then when i cook one (actually 1/4 ham) i have the thin slices i love and some solid pieces for dicing for omelets, and more and a small bone for pintos or GREEN split pea soup
