Kickin' Chocolate Chunk Cookies

I made these cookies as one of our chocolate desserts for Easter.  They were awesome!!

Kickin’ Chocolate Chunk Cookies 12 ounces semi-sweet baking chocolate, divided3/4 cup flour2 teaspoons Roasted Saigon Cinnamon1 teaspoon Ancho Chile Pepper 1/2 teaspoon baking powder1/4 teaspoon salt1/4 cup (1/2 stick) butter, softened1/2 cup granulated sugar1/4 cup firmly packed brown sugar2 eggs, lightly beaten2 teaspoons vanilla extract  Directions1. Preheat oven to 375°F. Melt 8 ounces of the chocolate as directed on package. Set aside. Coarsely chop remaining 4 ounces chocolate. Mix flour, roasted cinnamon, ancho chile pepper, baking powder and salt in small bowl.  2. Beat butter and sugars in large bowl with electric mixer on medium speed until light and fluffy. Add eggs and vanilla; mix well. Add melted chocolate; beat until well blended. Gradually beat in flour mixture on low speed until well mixed. Stir in chopped chocolate. Drop dough by rounded tablespoons or medium cookie scoop 1 1/2 inches apart on parchment paper-lined baking sheets.  3. Bake about 10 minutes or just until cookies are set and slightly cracked on top. Transfer cookies on parchment paper to wire rack; cool completely.

I do not own any Roasted Saigon Cinnamon or 1 teaspoon Ancho Chile Pepper.  Is this cinnamon different from the Frenchs I currently own?  What is Ancho Chile Pepper?  Where can I buy things like this?   I would like to try something new but am lost with these unusual ingredients.  Thank you, Renee.

Sue, you can use regular cinnamon, the Saigon has a slightly different flavor but would probably not be notices in a cookie like this.  (Cinnamon rolls yes but not a cookie)
Ancho chili you can get in most markets in the spice section or in the Hispanic section if your store has ethnic foods in separate aisle. It is a milder chili not nearly as hot as cayenne.  If you have a "chili powder" you could probably use that as that is a blend and not spicy hot.

Hi Sue, I would follow the recipe like it is. Saigon Cinnamon is awesome and will give the cookie a much
better flavor than regular cinnamon. I would also get the ancho chile pepper because I am sure the
combination of the saigon cinnamon and the ancho chile pepper is the kickin part of the cookie and it gives
the cookie the awesome flavor. I would google penzeys spices and check out the saigon cinnamon and the
ancho chile pepper. You can also check to see if they have a store near you. We have a store that is about a
year old in the San Diego area. You can sniff all their spices and other goodies. They will send you a catalog
and you can learn about their products and they also have stories and great recipes in the catalog. Enjoy
trying something new.

Well now I will also be taking leave of VBB. I have not posted very
much lately because of the way people were treating other VBB's.
VBB used to be a site that the members really cared about each
other and treated everyone nicely. I will miss the ones that have
treated me well.

I'm really confused as to who wasn't treating whom nicely.  I admit that I am not on here every day, but I really must have missed something.  I hope those who are leaving will reconsider.  There are some of us that really enjoy hearing about members all over the country!!!
