I wonder if anyone else is so happy to see raw peanuts, shelled and ready to go, in the stores.  I haven't seen any (except the peanuts still in the shell and some a dear lady of this site sent

I wonder if anyone else is so happy to see raw peanuts, shelled and ready to go, in the stores. 
I haven't seen any (except the peanuts still in the shell and some a dear lady of this site sent to me) for almost two yeatrs.
This morning I saw bags of them and was thrilled.  I bought all I could afford and stuck them in the freezer with the mint chips that just appeared.
I hope I have time this afternoon to make PEANUT BRITTLE!
Oh, what an expensive but glorious week.

Tell me, Nancy G.....what does one do with "raw" peanuts....besides peanut brittle, that is?  I do love peanut brittle, however, I have never made it myself.  When my Mother was alive, she asked us to get her some whenever we saw any, especially when we were on our bus trips, as she liked to taste it from different places.  She said no two ever tasted the same.  It's been 24 years since she's been gone; but I still remember her chomping away on that brittle!!

Nancy when I saw the headline I knew the post was by you!
I still have not seen them is the stores but "my" nut-house does have them  the one in Barrington closed so I will be going to Elgin to get nuts but the drive is about the same either way. 

I have also used raw nuts in stir fry cooking. Sometimes if you use the already roasted ones they can get a bit over cooked in the stir fry. 
I have not made peanut brittle in such a long time.  It is not a favorite of mine so I don't think about it that much.

Hi Darla --- here's my recipe for microwave peanut brittle ...........

MICROWAVE PEANUT BRITTLE
Butter a piece of foil covering a cookie sheet.
Use a large glass (microwave proof) bowl. I have a giant glass measuring cup.
It has a handle -- much, much easier to use.

1 cup sugar
1/2 cup white syrup
1 cup raw peanuts
1 tsp butter
1 tsp vanilla
1 tsp baking soda
Put sugar and syrup in large microwave dish. Stir well.
'Wave uncovered on HI for 4 minutes.
Stir in peanuts. 'wave for 3 minutes.
Stir in vanilla and butter. 'wave 1 minute
Stir in baking soda, Stir hard and fast and quickly pour/spoon
onto buttered foil. Spread out. Cool and break into pieces.

I add 5- 10 seconds to each cooking time. The mixture will
appear pale when it's done but it's OK. Do cook it long enough.
The mixture turns a pale gold color.
The cooking bowl gets very hot. Be careful.

Pile up newspaper or something "heat proof" where you
set the cookie sheet. This is HOT.

After emptying the bowl it will appear to be so covered with hard
brittle that you can never get cleaned....fill with water and let soak
for a bit. It will all dissolve.

I've tried making this with all sorts of other nuts - pecans.
filberts, Brazil nuts (chopped), almonds, etc. I didn't  like them very much.

Nikki - I can't imagine using a raw peanut in "food".  I think they taste like funny grass.  So, please tell us your stir fry recipe.
I never liked peanut brittle until I got this recipe 25-30 years ago. This is really great stuff and so many people love it.  Bells will ring all over this little town as people discover the nuts - lol

Good to hear you were able to stock up on the raw peanuts this year, Nancy! My Dad loves peanut brittle and I'm making this for him for his birthday.

When you add the peanuts to a stir fry sort of clear a spot and toss the peanuts, chopped a bit if you wish, onto the bottom of the pan.  The heat will start to toast them.  Stir around so they do not burn  then stir the rest of the ingredients into the nuts and finish cooking.  Or if you wish toast them a bit first by frying a bit before you start the stir fry.  Remove them from the pan then just add to the finished dish.

Nancy....thanks so much for the recipe.  Now.....I just have to get up enough nerve to make it!!  Playing with HOT stuff makes me nervous but "nothing tried....nothing gained"!  Thanks again for the recipe!!  Darla

Thanks Nikki ---- I'm going to have to try that.  Chinese food is my favorite.  Next time I make some I'll add peanuts.

I make divinity slowly on the stove top with a candy thermometer.  My sweet candied pecans are also the slow way so this microwave method of making peanut brittle is a real joy for me.   It's so fast and easy and soooooo good.

This afternoon is going to be peanut brittle time in my house.   I'm going to make as many batches as I can.   Tomorrow night I'll take bags to Bible study at church.  What a treat!!

OK,   you got me I will have to track sown some raw peanuts....maybe I will use almonds I like them better than peanuts and I have some in the house.  I will let you know how my almond brittle turns out.

fuddy duddy, stick in my ways ...
I think brittle just HAS to be peanutty.

I do'nt think a person as active and involved as you are can be called an old fuddy duddy.

My cats?  My cats !!  Peaches and Badcat had their annual trip to the vet just yesterday. 
It's a lot harder on me than them.
I'm still tired ..... too tired to make/cook anything.  The peanut brittle can wait until tomorrow.
