Hungarian : Zucchini with sour cream and dill

  This is something my mom made often in the summer when zucchini were plentiful,it's a great side dish it can be served hot or cold.     Ingredients:4 medium zucchini, 2 teasp. salt.,3 Tabs. oil, 1 medium onion chopped fine,2 Tabs.of fresh dill chopped fine or 1 teas.dried dill weed, 4 1/2 teas. flour, 3 Tabs. cold water, 1 teas.paprika, 1/3 cup of sour cream. Peel and cut the zucchini length wise seed the zucchini if the seeds are large,Grate them on a box grater using the largest holes when grating make them as long as possible so it resembles noodles,put the zucchini in a bowl and sprinkle with the salt stir to mix the salt evenly.Chill for one hour.Pour any liquid that has drained from the zucchini off .Heat the oil in a sauce pan and saute the onion for about 5 or 6 mins,on a low heat until softened,stir in the zucchini and dill and cover,continue cooking on low another 5 to 6 mins. until tender crisp.In a small bowl stir together the water and flour to form a smooth paste,stir in the paprika and sour cream into the flour and water mixture.Add this mixture to the zucchini and cook until the zucchini is hot and the flour is cooked.My mom used to stir in a teas.or 2 of white vinegar after it was cooked but you don't have to.I hope you like this it is a favorite of mine.Enjoy!

I had something like this when I was in Hungary several years ago.  We ate a lot of cucumbers, tomatoes and onions, separately and in combination.  I can almost taste it now.

I have made zucchini  grated , salted and drained, just plain, but this takes it a step further.  Sounds so good.  Thanks for the recipe.

P.S. I usually grate zucchini in the food processor.  It goes really fast, and saves a lot of fingers.

Gale,  Thank you so much for posting this recipe.  This sounds really great!! I will be making this one
Did you use Hungarian paprika? I didn't get to make the other zucchini recipe today, we had to do
yard work. I got zucchini for 49 cents a pound this week. Thanks again for the recipe.
