I remember the very first time I tried to can anything --- tomato juice made from my own tomatoes in Omaha, NE, 1981. It was HARD work. I thought about mom canning everything . I phoned her, told her I was canning tomato juice in my gorgeous, air conditioned kitchen, on my lovely electric kitchen range. I asked her how she did all that with no air conditioning, no running water on a wood stove. Her answer was incredible ...... She said, "oh, I didn't mind any of that but I always hated chopping the wood".

That is funny Nancy but oh so true! We never had air until I was well into my teens and we were lucky to have that window air conditioner.We need to go back to the simpler times if that's what we really want to call it,no not so easy times would be a better choice.All this stuff we have now is it really necessary or are we just lazy?If things keep going with the way the economy is going I think a lot of people are in for a rude awakening,better start learning how to do things now.Mom had a small root cellar under the kitchen floor that is where the canned goods were stored.She kept a rug over the top to hide it.
