What are your holiday baking plans?

Hi all,

I myself, am planning on doing a lot of baking this year and sending out as gifts. I found several really good bulk cookie recipes and made a few of my own, that freeze well and then I can make as soon as it gets cooler! I am starting my ingredient lists now and working my way toward getting ready to make all the doughs! I also am planning on making candy and fudge, as well as some new recipes. I have several recipes I made myself that are always hits, Double Vanilla, Triple Threats and Double Dutch Chocolate, which everyone I know eats them up in a hurry! I also make some Cinnamon, Vanilla Cinnamon and a Vanilla with Chocolate.

So, what are you planning to bake this year?

Sounds like you are going to be doing a lot of baking Jennifer! I will be doing some holiday baking, but not as much as you are. I usually make pies for Thanksgiving and cookies and chocolate bark for Christmas. I'm not sure how many different kinds of cookies I will be making. It will depend on how much time I have.

Hi Jennifer ..... it's way too early for me to think about Christmas baking. The holiday I'm working on right now is Labor Day - next Monday. I'm baking cookies just as fast as I can.

My regular baking & candy making includes: chocolate covered cherries, fudge with nuts, fudge without nuts, almond roca, almond bark, lemon bark, spiced nuts, 7 layer bars, date crumb bars, kolaches, shortbread, Special K bars, lemon squares, and caramel layer chocolate squares. And then I usually try at least 1 new candy recipe and 1 new baked goodie recipe. These are all for gift giving, and sending to my Navy son and his squadron who will be spending Christmas on an aircraft carrier in the Arabian Sea.

I will be doing my normal holiday baking this year.pies,cakes,cookies,fudge and some candies.I love to do gifts in a jar.it's nice to give already made bakery gifts but I think it is nice to give baking mixes also,some for now and some for later.Gifts in a jar are always great hostess gifts to be made after the holidays.

Yikes Jennifer, you are on the ball! I haven't even begun to think about holiday baking. I'm still trying to finish up a quilt for our son and his wife, who will be celebrating their 25th anniversary in January. I thought I'd have it done about a month ago, but I got sidetracked. Once that is finished, I'll try and get my plans together. Thanks for the reminder.

Cookies make great gifts and I would love to get a recipe that makes a large batch. Would you share your Bulk Cookie Recipe. the Triple Threat sounds good as I imagine that there is chocolate and more chocolate and possibly more chocolate. Just a guess on my part I may be way off......

My hubby loves Choc. Covered Cherries; are they hard to make? Also, I am in hopes of tying to make your Almond Roca for Christmas but I am afraid it might be too hard for me to make. I have one question for you, what kind of candy thermometer do you use?

I haven't thought about holiday baking yet! I know I will be making a few types of cookies and I want to try a couple of the new candy recipes that are listed in the forum. I usually make cutout cookies for Halloween and try a new recipe for a dessert for Thanksgiving. I too would appreciate if you would share your recipes with us...especially the Triple Threat!

Also, I would like to welcome you Jennifer F to VBB. You will like it here, great bunch of people, we enjoy sharing baking tips and recipes. I hope you will join in on more of our discussions.

Hi Susan K. - The candy thermometer I currently use is a Hoan, and I don't remember where I bought it. I think I saw a thermometer at Target and it should work fine. The candy thermometers are the longer ones that have a hook to hang it from your pan.

Here's my Chocolate Covered Cherries recipe. It may sound difficult, but it's not - just time consuming!

1/3 c. butter; softened
1/3 c. white corn syrup
1/4 tsp. vanilla extract
dash salt
1 lb. (3 1/2 c.) powdered sugar
2 14 oz. jars stemmed maraschino cherries; drained
5 oz. semi-sweet baking chocolate
4 oz. unsweetened baking chocolate
1 tbsp. paraffin wax; grated

In large mixing bowl, beat butter, syrup, vanilla and salt. Add sugar to the creamed mixture all at once. Work in the sugar, and knead until smooth but not sticky to handle. This will be really thick, but the more you work it in, the smoother it gets. Roll portions into a ball about the size of a walnut. Enclose cherry in it by flattening the ball of dough into your palm and rolling it around cherry. Place each wrapped cherry on waxed paper lined pan. Chill at least 2 hours or overnight.

CHOCOLATE: *Melt chocolate squares and paraffin in double boiler. Dip chilled cherry in chocolate, rolling to coat. Place on waxed paper lined pan. If I have any chocolate left over, I like to drizzle it on the tops of the cherries, varying the patterns as you like. Chill until firm.

Store in refrigerator, so the chocolate does not 'separate.'
Yield: 40-50
*You can adjust the bitterness of the chocolate according to personal taste by changing the proportions of semi-sweet and unsweetened baking chocolate.

I usually make the peanut butter cookies with the chocolate kiss, M&M cookies and Italian cookies with anisette flavoring. However, the last two years between my fractured wrist, my two knee replacement surgeries and my husband's MS I didn't do any baking. However, my youngest son made them and brought them here when he came at Christmas time. They were delicious. When everyone told him how good his cookies were, his reply was: I learned from the Best!!!

Great picture Verlee! I think I gained weight just looking at it lol. But that won't stop me from trying to make them.
