Luckily I have not had to venture into this. 
All I know is that there are several companies that make "blends" that can be used.  Bob's Red Mill, King Arthur Flour are two that come to mind right away. 
I do have a recipe that I personally have not made yet but I have given the recipe to people and I was told it was good. 
The recipe is for a Chocolate cake.  Here is the recipe and I hope it helps you out. 
The texture of this is somewhat like a flourless chocolate cake. 
Garbanzo Bean Chocolate Cake
1 1/2 Cups semi sweet chocolate chips
1 (19 ounce) can garbanzo beans, drained and rinsed
4 eggs
3/4 Cup white sugar
1/2 tsp baking powder
1 Tb confectioners sugar
Pre heat the oven to 350 degrees F. 
Grease a 9 inch round cake pan
Place the chocolate chips in a microwave safe bowl. 
Heat in microwave for about 2 minutes, stirring every 20 seconds after the first minute, until chips are melted and smooth. If you have a powerful microwave reduce power by 50%
Combine beans and eggs in processor.  Process until smooth.
Add sugar and baking powder and pulse to blend. 
Pour in the melted chocolate and blend until smooth, scrape down sides of bowl. 
Transfer batter to pan. 
Bake 40 minutes in pre heated oven. Or until knife inserted in center comes out clean. 
Cool in pan on rack for 15 minutes.then invert onto plate.  Dust with powdered sugar. 

Personally I would also line the pan with parchment.
