Hi NANCY ; We both love ginger snap cookies.I am alergic to cinnamon & must avoid it. Kathy's recipe looks great, butuses lots of cinnamon.Yours also looks good but happily uses no cinnamon? Ann, I wondered about the amount of cinnamon in that recipe..1/3 Cup is a lot of cinnamon! I think that in most cases you could omit the cinnamon with out a problem. (Except if you were making something like Snickerdoodles) If you wanted to make up the, in most cases the teaspoon or so of spice, use a bit of ginger, nutmeg or other spice that is already in the recipe. In some cases even finely ground pepper might work.
