Does anyone know the recipe for Frog Eye Salad? It used to be on the box of Acini Di Pepe but it is not on the box I got in the store yesterday. My daughter wants me to make it fir her sons graduation

 I just searched Acini Di Pepe & there are too many recipes for the frog eye salad to post here.
 Do the search & hopefully you will find the one you want

I hope the frog's eyes are green grapes or olives. I never heard of Frog Eye Salad. Wouldn't like it is they were really frog's eyes!!!

I found this recipe on cooksrecipes.com:

This old time favorite is delicious as a salad or dessert. The recipe uses a tiny round pasta called Acine di' Pepe (like orzo, but round) which gives it an interesting texture similar to tapioca.

Frog's Eye Salad

1/2 cup granulated sugar
1 tablespoon all-purpose flour
1/4 teaspoon salt
1 (8-ounce) can crushed pineapple, undrained
1 (20-ounce) can pineapple chunks in its own juice, undrained
2 (11-ounce) cans mandarin orange segments, drained
1 large egg, beaten
2 teaspoons lemon juice
1 1/3 cups (8 ounces) Acine di Pepe Pasta, uncooked
3 1/2 cups (8 ounces) frozen non-dairy whipped topping, thawed and divided
3 cups miniature marshmallows
1/2 cup flaked coconut
Maraschino cherries (optional)
  1. In medium saucepan, stir together sugar, flour and salt.
  2. Drain pineapple, reserving juice to equal 1 cup. With whisk, gradually stir juice and egg into sugar mixture. Cook over medium heat, stirring frequently, until mixture comes to a boil. Stir in lemon juice. Cool mixture to room temperature.
  3. Meanwhile, cook pasta according to package directions; drain. Rinse with cold water to cool quickly; drain well.
  4. In large bowl, stir together pineapple juice mixture and pasta. Cover; refrigerate several hours or overnight.
  5. Add crushed pineapple and chunks, oranges, 2 cups whipped topping, marshmallows and coconut; mix gently and thoroughly. Cover; refrigerate until cold.
  6. Top with remaining whipped topping; garnish with cherries, if desired.

Makes 12 servings.

I never heard of frog eye salad.  I thought you were referring to pearl tapioca.

Thank you for the recipe Verlee. That is the recipe I used to have. I could not get on here
for a long time to post anything. I just keep trying when that happens and sooner or later it
will work. It takes a while to mke this but it is well worth it. I don't know why it is called
Frog Eye Salad. I can read everything but can't post sometimes.

Very interesting recipe.
I looked up the pasta and it looks very much like a large couscous. So I can imagine that it does look like frog eyes.  I just might have to make this for my sister.  When we were little I convinced her to give me her bowl of tapioca by telling her it looked like frog eyes.  She never liked tapioca after that.  Her loss my gain.....  Both in the bowls of tapioca and the weight!
