Freezing Homemade Bread Dough

I found an article about freezing homemade bread dough.You make your yeast dough according to your recipe.Put the dough into a greased bowl and turn over to grease the dough and cover with plastic wrap.Let rise until double in size about one hour.Punch the dough down and shape into desired loaf or smaller for rolls,place on a greased cookie sheet and place the tray in the freezer.After the dough is frozen remove from freezer, wrap the dough in plastic wrap and place the wrapped dough into freezer storage bags,mark the date on the freezer bag.These will keep for about 3 months.When you are ready to bake the bread take out of the bag and unwrap.Place in a greased  loaf pan,cookie sheet or muffin tins for rolls ,it will defrost first then it will start to rise.Let it rise until double in size then,bake as directed.

Good to know, it is hard to make home made rolls for 2 people. Thanks for the info & taking the time to post it.

Nancy, try to find either Bridgford or Rhodes frozen bread, and frozen rolls at your grocery store. I used to make homemade bread when my sons were home. But now that it's just my husband and myself, we don't eat much bread. These frozen loaves and rolls are just about as good as homemade, and sure make your home smell yummy!

Verlee - Thanks for the reminder ....100 years ago I used Rhodes for special times.  I suppose I should go find some .... it would be easy to keep in the freezer and use just 2 or 3 rolls at a time.  I wish I had it at Thanksgiving.

Hi Nancy,Verlee is right.I used these when I first got married,I was twenty two when I got married.My mom made bread all the time between following the directions on the frozen and learning from my mom I learned to make my own.I want to make some to put in the freezer I'm making a mess so I might as well make extra to freeze that way I only make a mess once in awhile lol!

My grandmother used to bake homemade bread all the time.  It was SO good.  I wish I could make it.  Maybe I will try someday.

I use the frozen ones that you buy also. My hands would let me
knead it very well now. They get achy when I try to knead it.

The store bought frozen bread is very good.I like to make my own,I do not knead my dough that's why I have a big mixer that does my work for me.I doubt that I could do it by hand anymore.I just wanted to make extra so I don't have to make it as often and when I'm pressed for time just pull it out of the freezer.

I used to make homemade rolls especially at holiday time then I got lazy for a couple of years.  My sons asked for the recipe (Grandma's) and now each of them have made the rolls several times.  Lucky me.
