Okay, I just successfully made my first two loaves of traditional white bread and they came out great!  I have never been able to get yeast to do what it does best, and tonight I think I got it (

I used to work at the elementary school around the corner from our home. I would walk home for lunch and start a loaf of bread in the bread maker. By the time my sons arrived home from school, they would be welcomed with the aroma of fresh baked bread. It was difficult to keep their hands (and mine!) off the loaf until dinner time. The bread maker is gone now, but it certainly made it easy for me to give my family that baked-by-mom treat.

                                                          White Bread      BAKE PRE-HEATED  350* for 30 minutes


  1/4 cup butter melted

  2 1/4 cup very warm tap water

  2  pkg.dry yeast

  1 Tabs. salt

   2 Tabs. sugar

   6 cups of flour  (APF)                

In a large bowl mix together water,yeast,sugar, salt and melted butter let rest for 5 minutes.Add 3 cups of flour and mix well,then add the other 3 cups slowly and mix well.This now can be kneaded by hand for 5 min.until the dough is elastic and smooth.I choose to skip the hand kneading and I do this with my kitchen aide mixer with the dough hook on low speed for about 5 min..Once the dough is ready place it into a greased bowl and cover with a clean towel or plastic wrap and allow it to double in size about 1 Hr.Once it has doubled in size punch it down and turn out onto a floured board and divide in two,roll out each piece and then roll jelly roll style and form into a loaf tucking in both sides to fit into your greased loaf pans.Place dough in pans seam side down,cover again and allow to double in size.Bake as directed 350* for 30 mins.

Back when I was going through my make my own bread phase, I used a recipe that called for one package of yeast but made 6-7 round loaves of bread.  Half of the fun of making it was giving it away to friends and neighbors.  That was such good bread.  A dear Polish friend of mine taught me how to make it.  She was a fabulous cook and baker.  I learned so much from her.  Sadly, she has gone to her reward but I often think of her, a great lady.

Huh?  What's "proofing"?  duh - I can't follow this at all Embarassed   When do I proof at 170 and bake at 350 ?

No! You're not dumb! I excluded that from my first post,I was just trying to give a tip on proofing or raising the bread dough not realizing that it was confussing.When I'm proofing ( allowing the dough to rise)  I first preheat my oven to 170*open the door and let it cool down,I place a pan of water on the bottom of the oven,I place the bowl of dough which I have covered in the oven because it is a warm place and the dough will rise faster.Once the bread dough is doubled in size I punch it down and form it into loaves and place the dough into greased bread pans cover them and place them back into the oven,no need to warm it again.Let the dough double in size again.REMOVE the dough and the pan of water preheat the oven to 350* and bake as directed.I hope this makes sense? PROOFING =RISING In a commercial bakery it is called proofing Sorry for any confussion..

I think that is the hardest part of making bread waiting for it to double.That's why I warm my oven a little so it rises faster.In a commercial bakery you have a proofer which is like a steam bath it allows you to raise the dough faster.We would never have any bakery if we had to wait too long for all this doubling to occur.So I do this little trick at home,because I don't like to wait,I'm impatient and I want my bread to get done faster so I can eat it. lol! It really isn't hard.

I grew up on a very rural, very primitive farm  (I have some faint memories of no electricity. 
We didn't have running water or any indoor plumbing until we moved away when I was in the 7th grade)  Home made bread was what there was.  It wasn't considered special or good or anything - it was just there.  In the peak of summer when there were harvests and things were so busy mom would occasionally buy a loaf of bread.    What a treat.  We loved that stuff.

Do you what's good about baking your own bread?  You can vent your frustrations when it's time to knead the dough!  And the end result smells and tastes so good.  With good homemade (and good bakery bread) I don't even need anything on it, just slice and eat.

What to do with (if you are lucky enough)  your homemade bread on day 2 Make toast with real butter and homemade strawberry freezer jam like I just did with a nice cup of French Press coffee.Oh my so good!

The perfect temperature for risint (proofing) is about 85 to 90 degrees.  Back in the old days when gas ovens had a pilot going all the time it was just perfect for proofing bread.

This is true,when I preheat my oven to 170* this is lowest temp,I open the door and let it cool off before putting my bread in to raise.My Mom always cooked with an electric stove,she would place her dough in this huge ceramic mixing bowl, I think waxed paper which she rubbed butter on over the top and then wrap it in a huge kitchen cloth and put it under a blanket and if it was cold outside she would even put a heating pad under the blanket with the dough.The house we lived in at the time was drafty at times you could stand at the front door and see all the way to the back door.She baked just about everyday.I miss those carefree days.We never locked our doors and even left the keys in the car.
