Favorite Summer Sandwiches/ Care to share Yours?

I remember in the summer my Dad would roast slab bacon on an open fire.He would cut through the rind and put it on a long fork or stick and score the bacon so it could be cut off as it roasted the Hungarians call this "salonnasutes" or bacon roast.I'll tell you give a Hungarian a stick and point him towards a fire and there will be a celebration.The Hungarians call this dish "Zsiros Kenyer" but translated it means"Greasy Bread" Mom would get a tray full of good bread laid out with thin slices of Vadalia onions and red radishes also cut thin and placed on top of the bread with salt ,pepper and good Hungarian paprika sprinkled on.As the bacon would roast Dad would let the bacon drip on the bread and would cut the bacon pieces on to the bread as it finished cooking.We would then grab a piece and fold it in half and eat it.I know this may sound different to most people but it is one of the most wonderful things I have ever eaten.I have had a lot of nay sayers eyes light up when they tasted this very simple concoction.They would say OMG!and ask for another piece.This is a peasant food at it's best! Very interesting and thanks for sharing such a wonderful memory of yours! It does sound good!

I love to take a tomato out of the garden; slice it up along with an onion. Then spread Mayo (yes Nancy...Mayo not Miracle Whip... hee hee) on bread and make a sandwich. Oh my goodness that is yummy for the tummy!!

My all time fav has to be the cheeseburger! We live in WI & sometimes grilling can be a bit of a problem in the winter months!

My favorite is bacon and tomato on toast .... spread with butter or miracle whip, whichever sounds best at the time.

Susan - the correct way to eat a really fresh tomato is to take a salt shaker to the garden, drop to your knees and crawl along gobbling tomatoes as fast as you can.

Gale - how very blessed you are to have such memories of a great father......... he sounds better than bacon!!!

Nancy, my Mom always carried a salt shaker and a pocket knife whenever we went for a ride in the country.You just would never know when there would be a road side stand.Tomatoes or apples which depended on the time of year as to what would be available,we just could never wait to get home to sample our goodies.Mom and I would make toast and butter it and put thin slices of green pepper on it along with salt and pepper,this always tasted so good.,maybe it was the company? I only had my Dad until I was fifteen,but that man showed me a lifetime in those short fifteen years.Both he and my Mom were better than bacon :)

My favorite is blt. It has to be a multigrain bread toasted, butter, mayo, lettuce
bacon and home grown tomatoes.

Gale that sounds so awesome. We used to take white bread, butter, sliced
radishes and salt and pepper. I used to really love that.

Nancy, You are correct! lol lol We always had over a 100 tomato plants every
summer in MI. We would take the salt shaker, pick the biggest ones and sit
right there and eat them and forget to take the salt shakers back. Mom would
tells us to go to the garden and get the salt shakers. We did this in the apple
orchard too with green apples. I still like to have green apples with salt.

There are a few Summer sandwich that are favorites.
Obviously the Tomato Sandwich..to be made only with fresh ripe tomatoes, mayo and bread. For the original it needs to be soft white bread. A bit "healthier" version would be a soft wheat. But I do like it on a heartier bread, sourdough is good but almost anything works.
Next would be the BLT, that I like on toast and a nice hearty bread can be used for that.
I do like a fresh veggie sandwich on occasion, tomato, lettuce, cucumber, a vinegar based dressing livens it up.
For a full meal, Italian sausage with peppers, onion, and tomatoes that have been roasted or cooked until tender in a pan or on the grill. This needs to be served on a crusty bread or roll, Italian or French.

And last but not least summer is a great time for my salami and cheese with roasted red peppers there is something about summer and cold sandwiches.
Egg salad, Ham salad, Roast beef with a spicy horseradish sauce any of these with some cold slaw or potato salad and a tall cold lemonade or iced tea sitting on the back steps of the house watching the kids catch fire flies or splash in the sprinkler. (swatting mosquitoes!)

Nancy, I have 24 tomato plants in 5 gal. pots just for the 2 of us. What I don't use,
I give to friends and neighbors. I lived on a dairy farm, 4 girls, and my parents. My
Mom did a lot of canning. There were 4 of us in the garden with salt shakers. My
Mom made tomato juice, stewed tomatoes, spaghetti sauce, and tomato relish.
All 4 of us girls had to help! I was the oldest so I was in charge of getting rid of
any tomato worms. lol lol My Mom was an awesome cook and baker!! I miss her!!

This spring I put 3 tomato plants in smallish pots on my driveway ...... on one every blossom fell of with the stem very soon after blooming. I tossed the plant. On the second plant some insect (worm?) attacked and ate everything except the major stems. The third is still trying - it 's still 'way too small for an "adult" tomato but it has produced two very small, very mealy ripe ones. I'm giving up.

I love a tomato sandwich with mayo (yes, mayo), on crusty italian bread.

When I was growing up, we grew tomatoes, too. When we didn't have enough, we purchased baskets and baskets of them. My mother canned tomato sauce, tomato paste, catsup, and everything imaginable other than tomatoes. Being the only girl in the family and the oldest, it was my job to help with the canning. I washed tomatoes, cut tomatoes, ran them through the grinder, washed and sterilized jars, etc. Did everything. Didn't mind.l Enjoyed it.

We also grew many other things in the garden and canned a lot of them.

Tuna salad made from grilled marinated tuna. The tuna is grilled over charcoal on an Oak Plank. I made a tuna sandwich and used a fresh tomato that I grew. No salt was used.

Marie, my Dad was everything to me.He was a Butcher by trade and he taught me so much.He taught me how to make sausage,fresh garlic sausage and a liver and rice sausage we called Hurka.I leaned how to cut up chickens also.My Mom was an excellent cook and baker,she made homemade bread and pastries on a daily basis and she canned everything.We had sour cherry ,queen anne cherries,pears ,apples and Italian plum trees in our yard.Our swing set was under one of the Italian plum trees and I remember pulling plums off to eat as I went down the sliding board,so many wonderful memories.There isn't a day that goes by that I don't think of those two wonderful people.Thanks for letting me share.
