Welcome Bruce.
Even though you are in the cookie business I do hope you will share some recipes with us. I happen to know there is at least one lady here that is always in search of cookie recipes.

Now as to my favorite cookie...
I have yet to meet a cookie I did not like.
My favorite cookies though mush have chocolate, peanut butter a bonus.
I like chewy cookies, I do not like cake like cookies. Although I like chewy cookies I do also like cookies made with butter so the result is usually a crisper cookie, but the flavor is better than a cookie made with shortening.

I have a recipe for a chocolate chip cookie that is outstanding and it is now my favorite chocolate chip cookie. It is from Jacques Torres' Chocolate Chip Cookies
Here is the recipe if you like to comment please do so.
Chocolate Chip Cookies
2 Cup minus 2 Tb cake flour
1 2/3 Cup bread flour
1 1/4 tsp baking soda
1 1/2 tsp baking powder
1 1/2 tsp coarse salt
1 1/4 Cup butter
1 1/4 Cup light brown sugar
1 Cup plus 2 Tb granulated sugar
2 large eggs
2 tsp vanilla extract
1 1/4 lb bittersweet chocolate chips or discs
Sift flours, baking soda, baking powder and salt into a bowl, set aside
In mixer fitted with paddle attachment, cream butter and sugars for at least 5 minutes.
Add eggs, one at a time mixing well between each.
Add in vanilla.
Reduce speed to low, add flour mixture and mix just until combined, 5 to 10 seconds.
Drop in chocolate and just incorporate, do not break up chocolate.
Scrape bowl and press plastic wrap directly on dough and refrigerate for at least 24 to 36 hours.

When ready to bake pre heat oven to 350.
Line cookie sheets with parchment.
Scoop 6 mounds of dough, 3 1/2 ounces each onto baking sheet.
Sprinkle lightly with sea salt if desired.
Bake until golden, about 18 to 20 minutes (rotate pan halfway through baking)
Transfer sheet to wire rack for 10 minutes, then slip cookies onto another rack and cool completely.
Makes 18 of these huge cookies or make them smaller and reduce bake time.
(I have also added nuts to these and it makes them that much better.)

I do believe the thing that makes these a bit different is the combination of bread and cake flour.
