OK Nancy,here is mine CHINESE ALMOND COOKIE : 2 3/4 cup of flour, 1 cup sugar, 1/2 t. baking soda, 1/2 t. salt, 1 Cup of lard,you can substitute butter or shortening or a combination of the two, to equal one cup, 1 egg, 1 teas. almond extract, 48 blanced almonds.PREHEAT oven 325* Sift flour,sugar,salt and baking soda and cut in lard with a pastry blender until it resembles coarse corn meal. Add well beaten egg and almond extract, mix well .Roll into one inch balls and place 2" apart on an ungreased cookie sheet ,press one blanched almond into the top of each one of the cookies.Bake 15-18 mins.Cool the cookies on a cooling rack. The cookies using the lard are authentic Chiunese almond cookies.
