Here's something a little different that I found on SparkPeople.com.

WINTER CRISP

1/1 cup white sugar
3 tablespoons white flour
1 teaspoon lemon peel, grated
3/4 teaspoon lemon juice
5 cups apples, unpeeled and sliced
1 cup cranberries

__________
Topping
__________
2/3 cup rolled oats
1/3 cup brown sugar, packed
1/4 cup wheat flour
2 teaspoons cinnamon
1 tablespoon melted margarine

In medium bowl combine sugar, flour and lemon peel, mix well.  Add other ingredients, stir to mix.  Spoon into 6 cup baking dish.

Mix dry ingredients for topping, add melted margarine and mix well.

Sprinkle topping over filling.  Bake at 375F for 40-50 minutes.  Serve warm or at room temperature.

At a local church class about tablescapes I learned how to cut an apple to make a bird - red or green apples can be used.  This fits right in with Christmas approaching.

I usually use Granny Smith apples for my pie and have learned that if I cut them thin enough they bake without being mushy or hard. I guess you can teach an old dog new tricks. I also love to make apple cake when I am overloaded with apples and afraid that they will turn.

I drove to the apple orchard Wednesday to purchase apples. The first orchard was sold out and sent me to another orchard. The second orchard sent me to a third orchard. Between the second and third orchard I found the varieties I wanted. All the orchards told me they would close by this weekend.

I drove to an apple orchard in virginia and purchased a box of Mutsu Apples at a very good price. Mutsu is enjoyed as a dessert apple, baking apple including apple sauce or cider apple. What is apple of choice?

I love apples but somehow after dealing with all the apples off our trees every fall, it does get to be a bit too much.  We lost one of our trees to a storm(broke down the middle), one only had three apples on the whole tree while the last one was loaded with red delicious.  I actually went to the store and bought a few different apples just to mix with ours for applesauce.

Still have about 65 pounds of apples to deal with in the coming months.  Guess I'll be making a lot of apple pie lol.
