HELP!! MY EASY FOCACCIA BREAD DIED!

on fri eve i started my bread just as the recipe directed,  i covered it and left it until around 10am yesterday
at that time i added the rest of the ingredients and left it to rise, the consistency was sort of like cornbread

i covered the bowl (ss mixing bowl)      and left it for about an hour   when i returned and lifted the towel (cloth) it had risen all the way up touching the towel  when i pulled the towel loose     it seemed to deflate
i went ahead and baked it   but i cooked it for almost an hour  and it was still doughy      and inedible

when i looked at the recipe again       i realized that it didn't say to cover the bowl
is that what caused this

I don't think covering the bowl made any difference and I'm not surprised that the dough deflated when you took the towel off of the bowl if the dough had risen to where it touched the towel, the dough deflates when you punch it down. I'm thinking that maybe it rose too much after you added the rest of the ingredients?

My thoughts are the same as Jean's.  I think it rose too much.  When that happens one is supposed to punch it down and let it rise again but not so much.

look at my recipe in the other string
this bread is not kneaded or punched down
i watched it deflate  like a witches cauldron burping out all the air
