Easy creamy lemon / key lime pie recipe

This recipe uses the same cream cheese base as my chocolate cream cheese pie, but lemon juice is added in its place. You can also replace the lemon juice with 1/3 cup key lime juice for a key lime pie

Easy creamy lemon / key lime pie recipe

This recipe uses the same cream cheese base as my chocolate cream cheese pie, but lemon juice is added in its place. You can also replace the lemon juice with 1/3 cup key lime juice for a key lime pie. Regular lime juice can be used as well, preferably freshly squeezed.
This pie is very rich and creamy!


Ingredients

1 pre-made graham cracker pie crust
6 oz. cream cheese, softened
1/4 cup (1/2 stick) unsalted butter, softened
1/3 cup freshly squeezed lemon juice (or 1/3 cup key lime juice)
1 (14 oz.) can sweetened condensed milk (not evaporated milk)

Directions

1. Bake pie crust for 5-10 minutes until golden or leave unbaked if desired. (I prefer the texture unbaked in this pie.)
2. In a clean food processor bowl or stand mixer, add cream cheese and softened butter. Process / beat until smooth and fluffy. Add strained lemon juice and sweetened condensed milk. Process / beat until very thick and smooth.
3. Pour pie filling into pie crust, cover, and refrigerate for 6 hours or overnight until set.

Hubby and I were in AZ, visiting our daughter, son-in-law and grandkids.  On the way back to the Phoenix airport from Prescott, we stopped at a well-known restaurant for pie.  Not only was there lemon pie, but a Tennessee Lemon Pie.  Has anyone ever heard of this kind of pie?  It look similar to a pecan pie, inthat there was that pitted-looking, glazy kind of surface.  There were so many varieties of pie that I decided on another selection but now wish I had tried that lemon pie.

From you description it sounded like a Chess Pie.  I looked it up and found a recipe for you. 
Tennessee Lemon Chess Pie
4 eggs, lightly beaten 
2 Cups sugar
1 Tb flour
1 Tb cornmeal
1/4 Cup butter, melted
1/4 Cup milk
2 tsp grated lemon zest
1/4 Cup lemon juice
9 inch un baked pie shell
Pre heat oven to 375 degrees F. 
In a bowl combine egg and sugar stir to combine
Add the rest of the ingredients. 
Pour into pie shell 
Bake for about 55 minutes until set. 

From what I have read about other chess pies it is the cornmeal that gives the top the character of a chess pie.

going to try this today need something different for a Muscular dystrophy bake sale for my daughters walking team.  this looks just like what I was looking for.  how long will this keep our bake sale isn't until Sunday, so is Tuesday too early to make this??

It keeps for one to two weeks refrigerated. When I made it, it seemed to actually thicken up with an improved flavor after about 3 days. I'm thinking the cultures in the cream cheese may have cultured the other ingredients in it, almost like yogurt. Because it has cream cheese in it, however, it's not safe to leave out at room temperature beyond 3 hours. Leaving it at room temperature all day long at a bake sale would not be safe.

I think the high amount of sugar and the lemon juice act as a mild preservative. I don't know if I would keep it in my refrigerator for 2 weeks. Frankly it would not last that long in the house and after 5 days if it was not gone I would probably trash it.  But that's me...
