Every year for as long as I can remember, we made white divinity candy at Christmas time. Does any one have the recipe for this candy? It is white, fluffy, very sweet and has walnuts or pecans in it,

You're sure very welcome, Darla. It's the recipe I've been using for so many years. And I dug out the cookbook to get its date - 1961!! When you're making this stuff do be careful of the temp .... 260 - not 258 or 259. And be patient beating it. If it seems like it has failed, it will simply not set up and get solid, set it aside, let it cool down just a bit and then start beating again - maybe it will work. I've never had a failure if I worked long enough.

Carol - did you have to sometimes beat longer and harder after usual times? Divinity can be hard work ..... worth every minute.

Here's a question I'd love to have answers to ...............
How old are you people that make divinity />

Nancy, I'm 64 and have been making divinity since 1966. Yes I have to beat it a lot longer
sometimes but I can feel from my hand mixer just when it is ready. It is really shining first
but when it gets a little dull looking it is ready.

Nancy, The flavors that I use are black raspberry, black cherry, cherry and strawberry. They
taste great!!

My mother-in-law could make divinity that would melt in your mouth.
I can't make it it is so hard you can hardly eat it. Does anyone know
what I am doing wrong.

Sara - are you cooking it past 260* ? 260 is hard ball and what you need for divinity. If you cook it much higher you get "hard crack" stage - the stage for hard candy.
Do you use a thermometer?

Nancy, I got these flavors when I went to IN to Shipsewana and it was at E & S Sales.
They don't have them anymore so I don't know what I will do when I have used them all.
They are called La Pura and are in 4 Fl. Oz. Distributed by James O'Neill, P.O. Box 616,
Venedocia, Ohio 45894. Phone # 419-587-3749. They are awesome and the Black Cherry
and Black Raspberry colors are very pretty. They also taste really great.

I am not afraid to try most things but the thought of making Divinity scares the #@*! out of me!
I don't know why I think it is all the folklore about making it...
Can't make it on a rainy day...
Can't make it on a cloudy day...
Can't make it on a day the mailman comes early..
Can't make it when the dog barks three times before ...oh you get the idea. I am exaggerating a little bit but I may just try it. I will sit and watch the forecast tonight to see if there is a full moon, the tide is right and the grunion's are running. If everything works in my favor I will attempt it this weekend.

LOL Nikki --- you know I can't bake .... I can't make pie crust, I can't use yeast, I've never made a successful cheese cake and so on and on and on.
But I can make divinity!! I make GREAT divinity. If I can do it, anybody can.
