In Response to Re: DO YOU HAVE A DISH THAT EVERYONE WANTS YOU TO MAKE? : You are welcome,Nikki.I have looked on the different recipe sites and there are not many pogacha recipes out there and most are different than the type I have had.To get the proper pork cracklings needed you would have to go to an ethnic butcher shop or deli.I've tried making it with bacon and that's not the same either.I was however surprised to see all the different countries that make them.

Ahhh, the amazing pig. Truly about the only thing that can't be eaten is the squeal. I think in this country we do not consume as much of an animal as people in other countries do. Possibly because "we" have always had so much, we like "eating high on the hog". I think more and more people are requesting "ethnic" cuts and pieces that were not used as much.
Gotta love the diversity that we are lucky enough to be able to sample. The diversity has always been here, in little neighborhood pockets but I think it is more "acceptable" for "outsiders" to explore these neighborhoods. I think if we try foods we have not tried before and come to love and understand the food we begin to understand the people.
