Can someone help me with some good recipes for chicken breast i always have a hard time making something yummy and original with chicken breast

I make these BBQ Chicken Packets once per month. This recipe is from the Kraft Foods site:

1 boneless, skinless chicken breast/person (or more if you have hearty appetites!)
1 pineapple ring/chicken breast
green, red or yellow pepper strips, to taste
2-3 tbsp. BBQ sauce/chicken breast, to taste
shallot slices, to taste

NOTE: You can make these up ahead of time and refrigerate. Bring to room temperature for about a half hour before cooking.
HEAT grill to medium heat. Place chicken (pounded if too thick) in center of large sheet of heavy-duty foil; top with remaining ingredients.
BRING up foil sides. Double fold top and ends to seal packet, leaving room for heat circulation inside.
GRILL 15 min. or until chicken is done (165ºF), or if the weather is nasty I find you can bake on cookie sheet in oven at 400, 18-22 minutes. Cut slits in foil to release steam before opening packet.
Kraft Kitchens Tips: Substitute a red onion ring for the green pepper ring.

Nutrition Information: Calories 170; Total fat 3 g; Saturated fat 1 g; Cholesterol 65 mg; Sodium 280 mg; Carbohydrate 10 g; Dietary fiber 1 g ; Sugars 9 g; Protein 25 g; Low fat; Good source of vitamin A or C Diet Exchange 1/2 Starch + 3 Meat (L)

That chicken in foil sure looks YUMMY; , I might try it w/ an Asian marinade/sauce( terryaki) or an old fashioned French dressing;oh how many  variations come to mind; & there's virtually no cleanup to making this dish

 Imake enough ough "instant"stufing ( 1/2- one cup prepared per person  of prepared homemade stovetop type,stuffing  mix toss in  in some/ lots of toasted pecans( chopped  or halved  w/  finely chopped  onion&  celery; in melted  butter w/  stuffing mix& broth as needed . level it out  in skilet, top w/boneless , skinless cicken breast filets or tenders & a lightly sweet-tart  lemon sauce or chicken gravy over the top.Cover &  simmer on medium low  till chicken is cooked thoroughy. Serve w/ veggie side(s): green beans, carrots&peas  or afrozen medley of broccoli cauliflower & carots w/butter, if desired.

A simple way to make chicken breasts delicious is to roll them in panko crumbs, add herbs and fry in olive oil.

I bake chicken breasts in a mixture of  healthy choice cream of mushroom soup, 1/2 packet of dry onion soup, and 1 cup of plain yougurt (can use sour cream).  Serve with mashed potatoes or Stove Top stuffing.

Here are two that I like.  I sort of "wing it" with proportions as they are very forgiving.

"Mexican" Style
Chicken breasts, as many as you wish.
2 Peppers, I use red and green.  If you want real spicy add a jalapeno or two as well.
1 Large onion
1 Jar of your favorite salsa
Rice, as much as you would like to make

Heat oven to 275-300 degrees F.
Slice chicken breasts into strips.  In a large sauté pan cook chicken until no longer pink.
Slice peppers and onions into strips about the same as the chicken.
Remove chicken from the pan, add peppers and onions.  cook until tender.
Place chicken back in pan. Add 1/2 jar of salsa and toss in the oven to keep warm.
Place rice in pan use the other half jar of salsa with water to make rice.
When rice is done serve with chicken.

"Italian" Style
Mix grated parmesan cheese with seasoned breadcrumbs.
Dip chicken in
Flour
Egg
Breadcrumb mixture
Brown in a sauté pan then transfer to oven to finish cooking.  Or after coating in mixture bake until chicken is browned.

I saw an interesting chicken recipe done on a show "The Chew" just this past week.  It was a chicken breast stuffed with Chorizo sausage.  You just stuff the chicken breast with the sausage and brown then finish in the oven.  The sausage sort of "bastes" the chicken so it does not dry out.  I would guess you could use any sausage a Hot Italian sausage would be good just thinking about it you could stuff it with bratwurst and add a bit of Swiss cheese over the top and serve with sauerkraut . You could go to "The Chew" website for the real recipe.

Verlee I am going to try this with some Jerk marinade I have.  I love the sweet spicy contrast and the pineapple is perfect.  That and some rice and I have a great dinner ahead.

It just so happens that we are making Italian Chicken tonight!!  Easy peasy lemony squeezy recipe that I made up in my head.

Italian Chicken

Boneless chicken breasts
Shake and Bake (which ever flavor you like best)
Spaghetti sauce (I use Hunt's canned in the flavor I am craving)
Provolone cheese, sliced

Coat chicken breasts in Shake and Bake and place in a baking dish.  Bake at 400 degrees for 30 minutes. 
Remove from the oven and place a slice or two of Provolone cheese over the top of each breast and cover with sauce.
Return to the oven and heat for an additional 10 minutes or until the cheese is melted and sauce bubbly.

I serve this with either spaghetti or Rice A Roni and green beans.Smile

Lemon Chicken with Thyme

3 Tbsp flour
1/2 tsp salt
1/4 tsp pepper
4 skinless boneless chicken breast halves
2 Tbsp olive oil
1 Medium onion
1 Tbsp butter
1 cup chicken broth
3 Tbsp lemon juice
1/2 tsp Thyme
2 Tbsp chopped parsley
Lemon wedges

In a plastic or paper bag, combine flour,salt and pepper and shake to mix. Add the chicken and shake to coat lightly.  Remove chicken and reserve the excess flour.

In a large skillet warm 1 Tablespoon of the oil over medium heat.  Add chicken and brown on one side, about 5 min.  Add the remaining 1 Tbsp oil, turn the chicken and brown well on second side, about 5 min longer.  Transfer chicken to a plate and set aside

Coarsely chop the onion. Add the butter to the skillet.  When butter melts, add the onion and cook, stirring until softened 2-3 min.

Stir in reserved flour and cook stirring until the flour is completely incorporated, about 1 min.

Add the broth, 2 Tbsp of the lemon juice and the thyme and bring mixture to a boil stirring constantly.

Return the chicken to the skillet, reduce heat to medium low and cover the skillet.  Cook until the chicken is tender and opaque throughout, about 5 min.

Divide the chicken among 4 plates.  Stir remaining 1 Tbsp of lemon juice into sauce in the skillet and pour over the chicken.  Serve the chicken with lemon wedges and a sprinkling parsley, if desired.

I've used this recipe a lot, and it is a great last minute dish.
