I need some desserts for Easter. This is at the last minute but I can not find a recipie that everyone will like.Please give me suggestions. (Happy Easter) Emily

I need some desserts for Easter. This is at the last minute but I can not find a recipie that everyone will like.Please give me suggestions. (Happy Easter)

We had our Easter dinner today due to everybody having other plans for tomorrow.  I made a carrot cake with cream cheese frosting.  The cake was from a box, but since I can never leave anything alone, I added some raisins to it lol.  The cream cheese frosting was a recipe from a baker on here.  Just type it in the box at the top of the screen and it will bring up quite a few.

Brownies are always a special treat too.  I topped mine with dark chocolate chips while it was still hot so they would melt.  Came out very pretty.  You could even sprinkle some jelly beans on top.  Or, you could use a pound cake to make a trifle.  Pound cake cubes layered with pudding and berries, topped with whipped cream or topping.

For something easy, how about fresh berries over pound cake topped with whipped cream or Cool Whip.  You could even buy the pound cake frozen.  Or cube the pound cake and sprinkle it with orange juice or a liqueur then layer with a pudding (can be made with a mix) and fresh fruit / whipped cream, or whatever you like.  Use your imagination!!

Do you want something Chocolate or not?
I have a great Chocolate Torte Cake that is pretty easy and A fantastic Cranberry Almond Pound Cake that is to "die for"
I will provide both here for you.  The chocolate cake one if you break it down into steps it is very easy?
Fantastic Chocolate Torte
Cake
1 3/4 Cup flour
1 3/4 cup sugar
1 1/4 tsp baking soda
1/2 tsp salt
1/4 tsp baking powder
2/3 Cup butter or margarine
4 squares (4 ounces) unsweetened chocolate melted and cooled
1 1/4 Cup water
1 tsp vanilla
3 eggs
Filling #1
1 1/2 packages Bakers German's Sweet Chocolate (or you can use 6 ounces of semi sweet chocolate chips if you don't want the filling so sweet.)
3/4 Cup butter
1/2 chopped toasted almonds.
Filling #2
2 Cups whipping cream, lightly sweetened and whipped.
for cake:
Pre heat oven to 350
Grease and line with parchment paper 2 nine inch pans.
In a large bowl of mixer, combine flour, sugar, soda, salt, baking powder, butter, melted cooled chocolate, water, vanilla.  Beat on low to blend; then beat 2 minutes at medium speed scrape sides and bottom of bowl often.  Add eggs; beat 2 minutes longer.
Pour batter into pans and bake for 30 to 35 minutes or until they test done.
cool cakes then split layers in half so you have 4 thin layers.

While cakes are baking prepare fillings.
Melt 1 1/2 packages of the Baker's German's Sweet chocolate or the semi sweet if you decide to use the chips.  The butter should be very soft.  Stir butter and almonds into the chocolate and allow the mixture to cool and thicken.  (Mixture should be very thick.)

Whip cream to medium stiff peaks.

Assembly:
Place 1 cake layer on serving platter.
Top with half the chocolate, butter and nut mixture.
Place second cake layer on top of chocolate mixture.
Top with a good amount of the whipped cream.
Repeat layers ending with whipped cream.
Do not frost sides allow the chocolate and cream to sort of ooze out between the layers.
If you have used the Sweet chocolate use the rest of it to make chocolate curls and decorate the top of the cake.

Cranberry Almond Pound-cake
1 Cup dried cranberries
2 Tb amaretto (you could use orange juice..but why?)
3 Cups flour
1 tsp baking powder
3/4 tsp salt
1/2 tsp baking soda
1 can,7 to 8 ounces of almond paste
1 Cup butter
2 Cups sugar
1/2 tsp almond extract
5 large eggs
8 ounces sour cream or you could use 8 ounces good Greek Yogurt
2 Cups whole fresh or frozen cranberries
Pre heat oven to 350 degrees F.
Grease and flour a tube or Bundt pan
In a small bowl combine dried cranberries and amaretto, set aside
In a small bowl grate almond paste
In large bowl of mixer, at medium speed, beat butter until creamy.  Gradually beat in sugar; beat 3 minutes or until light and fluffy.  Beat in almond paste.  Beat in extract as well  Add eggs one at a time, beat well between additions.  Reduce speed to low; add flour mixture alternately with sour cream beginning and ending with the flour.  Beat just until blended.  With spoon stir in dried cranberries with the soaking liquid.  Stir in fresh or frozen cranberries as well.
Pour into prepared pan and bake 1 hour and 30 to 40 minutes or until a tooth pick comes out clean.  Cool cake on wire rack for 1 hour then remove cake from pan and cool completely on rack.

I tried to edit my post for the Cranberry cake but I guess it did not accept it...I bet this will be a duplicate my poor fingers!

In a small bowl combine dried cranberries and amaretto, set aside

In large bowl of mixer with mixer at medium speed beat butter until light and fluffy.  Gradually add the sugar, beat 3 minutes, scrape sides and bottom of bowl.  Add almond paste and almond extract. Add eggs one at a time beat well between additions.
Reduce speed to low add flour mixture alternately with sour cream beginning and ending with flour. Beat just until blended. 
With a spoon stir in dried cranberries with their soaking juices.  Stir in fresh or frozen cranberries.
Pour batter into pan and bake 1 hour and 30 to 40 minutes or until a toothpick comes our clean.
Cool 1 hour on wire rack.  Remove cake from pan and cool completely on wire rack.

I made carrot cake (recipe follows), and the Raisin Apple Bread Pudding recipe found on this VBB site.

Carrot Cake With Cream Cheese Frosting

2 c. sugar
1-1/2 c. oil (I use olive oil, regular, not EVOO)
4 eggs
2 c. flour; sifted
1-1/2 tsp. baking soda
1-1/2 tsp. salt
2 tbsp. baking powder
2 tsp. cinnamon
2 c. carrots; grated
1 8 oz. can crushed pineapple; drained
nuts, raisins; optional
8 oz. cream cheese
1 lb. powdered sugar 

Cream sugar, oil and eggs. Combine all dry ingredients and add to creamed mixture. Stir in carrots, pineapple, nuts and raisins. Put in greased 13 x 9 pan. Bake at 350°F for 35-40 minutes.

 

Frosting: Mix cream cheese and powdered sugar with mixer. Frost cake.

I am so glad you liked it.  I always get a bit nervous when I suggest a recipe, never sure if someone else will think it is as good as I do.
Doesn't it make the whole kitchen smell wonderful as it is baking?

Great!.  It is one that looks a lot more difficult than it is.
It is another favorite of mine for taking to dinner or when I have company.
