I am making a Tunnel of Fudge cake.  A new recipe that has no nuts it uses Cacao nibs in place of the nuts.  Will let you all know how it turns out.  I did post the recipe a while back in chocoholics forum.  I will give my review there and with the recipe so if anyone is interested it will be there.

Once the cacao beans are roasted and chopped, before they are ground that is the nib.  Texture is sort or like a coffee bean that has been broken but not yet ground.
There are chocolate bars that have cacao nibs in it and it gives the chocolate a bit of a crunch like a nut would but there are no nuts.
All I can say right now is the house smells wonderful.  All warm and "chocolaty" if that is an appropriate description.
I am having company tonight and I am making an Orange chicken along with a coconut rice that I saw on The Chew last week. I figure if the chicken fails we can eat cake.

Nicki, I'm sure your whole meal will be wonderful!!  Your guests will enjoy it all!!
For dessert we are having Turtle Brownies, one of our favorites.  However, after we eat they will go into the freezer, and portions will be brought out gradually, so we don't gobble them down.

We still have one piece each of the cherry cream bottom pie that my son made.  As far as I'm concerned, I'd rather have the dessert along with a good cup of coffee and then maybe a light supper.  My Grandpa always ate his dessert first and I guess I follow in his footsteps.

I should NOT have had dessert, but couldn't resist that last piece of pound cake buried under fresh California strawberries and a dollop of whipped cream!

Don't you love this time of year with all of the fresh strawberries?  There are so many delicious ways to use and enjoy them.  We had angel food cake with strawberries last week, and today I dipped the most beautiful berries in chocolate and they turned out so well.

In my "clear the freezer out" project I found a tub of Light Cool Whip yesterday.  I mixed a package of sugar free chocolate pudding then folded the pudding into the thawed cool whip.  We had that for dessert yesterday and I have some left so that is what is for dessert today.  I must say the pudding was good and I just might play with other flavors, I think the cheesecake flavor would be great in those little chocolate cups or a pie crust.
