Pickled watermelon rind has very little flavor contributed by the watemelon rind itself. The flavor comes from the vinegar, sugar and spices used in the syrup the pieces of rind are cooked and processed in. In one of my cookbooks for microwave cooking there is a section for pickles, relishes and stuff. There is a quick version shown. I have not tried it yet. Years ago we had some W R pickles a cousin had made and given to us. They were good but not enough to make any of our own.

Thanks Frances that is what I thought but you never know.I've seen a couple of recipes and it calls for cloves and I'm not a big fan of cloves.
