Cucumber salad

I made this salad today and this is another family favorite.Peel and slice 2 cucumbers on a mandolin or by hand if you can slice very thin.Place the cucumber in a strainer or colander and sprinkle lightly with salt.Allow this to drain for about an hour and also press the cucumbers against the side of the strainer to get rid of as much liquid as you can.Slice a Vidalia onion into very thin slices and put it in a bowl with the drained cucumber,stir in a few heaping tablespoons of Greek yogurt or sour cream this is what I use and I like Daisy sour cream the best.Sprinkle with black pepper and more salt if needed.This will be enough for about four people.This is so refreshing on a hot summer day.

It sounds good, but I think I would want to add chicken salad and tomato to go along with it.

Gale...

I was just going to post and ask if anyone makes Cucumber Salad; I just got 2 today that was grown in there garden.  My Mom made it and boy was it good.  From what I read in your recipe Gale, it sounds just like my Mom made, but for some reason I thought she added a little vinegar.  I don't know!!

My mother made cucumber salad.  She sliced the cucumbers, added heavy cream and white vinegar, salt and pepper.  My brothers loved it then and still love it.  My one brother makes it many times when he goes over to his brother's house.  They are both single, so they get together a lot to BBQ and eat.

Hi Susan,This is how my Mom and Aunt made theirs,there are different variations of this ,some people add vinegar,garlic,dill,sugar and even paprika.My Mom's family were very poor,my Grandfather worked in the coal mines in Pa.They probably made it with what they had on hand at the time.This reminds me of Taztziki,the sauce for Gyros,but they grate the cucumber.You can add a little vinegar if that is what your Mom did,I think it's just a matter of personal taste.

for the recipe and the additonal items you can add to it. I have 6 cucumbers in
the house so I will be making this on Monday. Hubby got 6 for a $l.00 today!!

Cucumber salad is a definite refreshing change to the everyday salads. My German friend usually makes it with meals. She uses sour cream and vinegar. Being Italian, I do add a few extras, but Loretta's salad is great especially when we get to eat her rouladen too!

I've made cucumber salad this way using sour cream and another way using oil and cider vinegar and a touch of sugar.

The cucumber salad I grew up with had no sour cream  (I don't think sour cream was invented until many years after my birth Wink) .... It was just sliced cucumbers and onions with a dressing of vinegar, water, sugar, salt and pepper.

Thanks for sharing Gale.  My Mom makes hers almost like that too.  I love garlic so sometimes I leave out the onions and just double the garlic.  Can't wait for my cucumbers to be ready.

I'm so glad of the response on this forum! It's not what we eat,it's who we eat with. I enjoy sharing with all of you.Good food and friendship should be shared ! Just a reminder make sure you salt lightly and let the liquid run off for about an hour and push against the sieve or colander even though it wilts it will still be crisp.Add what ever you like,more important ENJOY!

Cucumber salad with just onions, vinegar a sugar is one of my favorites.  My sister-in-law always makes hers with sour cream.  I like them both.  I wish I had better luck with growing the cukes in my garden so i could not only make salad but some homemade pickles as well.

Gale, I have made this salad for years and there is no way it serves 4 people.  I can eat a bowl of it myself! 
This is one of our favorite summer salads.  Often I will slice tomatoes up with the cucumber.
I will also use the same dressing, a Greek yogurt and thin it with a bit of vinegar and mix in cold cooked green beans. That is another great summer salad.
