CROCKPOT CINNAMON ALMONDS

CROCKPOT CINNAMON ALMONDS

Ingredients:...

1 1/2 C. Sugar
1 1/2 C. Brown Sugar
3 Tbsp. Cinnamon
1/8 tsp. Salt
1 Egg White
2 tsp. vanilla
3 Cups Almonds
1/4 C. Water

Directions:
In a medium sized bowl, mix together sugars, cinnamon, and salt. Set aside. In another medium sized bowl, whisk the egg white and vanilla until it’s a little frothy. Add almonds. Make sure the almonds are thoroughly coated in the egg white mixture. Add cinnamon mixture to the almonds and toss until coated.

Thoroughly spray with the stoneware of your crock pot with non-stick cooking spray and add the mixture of almonds and sugars.

Cook on low ( with the lid on) 3-4 hours stirring every 20 minutes. In the last hour, add the 1/4 C. of water and stir well. This ensures a crunchy yummy coating. (*make sure after you've added the water that you continue to cook the nuts for another 45 minutes to an hour.)

You have to stir really well, especially as it gets later in the cooking process.

Line a baking sheet with parchment and spread the almonds flat to cool. The almonds will be sticky at this point, so make sure you separate them a little and have no large mounds.

I would imagine others types of nuts could be done the same.The holidays will be here before we know it!

I am going to preface my comment with the statement that I am not a fan of slow cookers. I rarely use mine so that said....
If you have to stir every 20 minutes would this not be easier to do on the top of the stove in a heavy pan and have it done in 15 or 20 minutes then possibly finish off in the oven if necessary?

I will try these I have a few hazel nuts/filberts that look ready to pick and this might be the way to do them.  
I think these would be great done with pecans and then use the pecans in a cookie recipe.

I think crockpots or slow cookers are a valuable tool when you work and also during the hot summer months.It doesn't heat up the house like the stove or oven.I use mine enough to justify having one.I always use it during the holidays and there is one thing I make that the family never gets enough of and that is dressing.I make a slow cooker full and stuff the bird when they are finished I take the stuffing out of the bird and mix it into the crock with the rest of it.Now I want dressing! lol !

I think any dressing would work .I just make an old Fashion dressing using bread of course,onions and celery saute in butter,parsley,sage,poultry seasoning,salt and pepper.I cook the turkey neck to make a seasoned broth and pour that over the dresssing.I also stuff the turkey.When the turkey is done I usually mix the stuffing from the turkey with what I have in the crock pot,but you wouldn't have to.
