      CROCK POT PUMPKIN BUTTER

1 - 29 oz can of 100% pure pumpkin (not the pie mix)

1    Cup apple juice

3/4  Cup sugar

3/4  Cup light brown sugar

1     teaspoon ginger

3     teaspoon cinnamon

Mix all ingredients together .Cook in crock pot on low for 10 hrs.
Tilt the lid the last hour if the pumpkin butter just doesn't seem to be thick enough to allow the steam to escape.
The pumpkin butter is done when you can hold a spoonful upside down and the pumpkin butter doesn't fall off the spoon.Store in a covered container in the fridge.
This is great on toast, english muffins or biscuits

This could also be done on the stove top.  Requires a bit of stirring once in a while but not a big deal.  Would take 45 minutes hour at the most.
I have been adding an apple grated to my pumpkin butter and it tastes wonderful.  I just use the grated apple rather than the juice.
Last batch of apple butter I made I tossed in the last of the bag of cranberries I had in the freezer, there was maybe a cup or so.  cooked it just until the berries started to burst.  Wonderful sweet from the apple butter but once in a while you get the tang from a berry.
I will be adding a slather to the turkey sandwich I plan on having tomorrow. (Thanksgiving dinner is tonight at my daughters as they will be away next week)

Some more good ideas Nikki. The reason I posted a crock pot.recipe is because it's easier and safer for me to use the crock pot. This could easily be made on the stove.Last week I boiled something on the stove and went to strain it in the sink I spilled some on my lap luckily I was wears slacks and was able to pull it up and away from my leg needless to say it really hurt.No one was here at the time to help me out.LOL! I really have to be more careful.I'm thinking pumpkin butter would make a great filling for crepes roll them up a dollop of whipped cream on top and a little more cinnamon spinkled on
