These can be filled with just about anything savory or sweet : 2 eggs beaten,1/2 cup of milk,pinch of salt,1 teaspoon of confectioners sugar,1 1/2 cup of all purpose flour,1 1/2 cups of club soda.Mix all ingredients in given order,whisk and make sure there are no lumps.Let set for about 10 min.Preheat a ten inch non stick skillet,spray with cooking spray and spray before every crepe that is made I use about 1/4 cup of batter per crepe Pick the pan up and put the batter in the center of the pan and roll your wrist to evenly distribute the crepe batter.Allow about thirty seconds for the first side,small little brown spots will appear when the side is done flip and watch the second side you may have to adjust the heat as you go.along usually med. to med. low is good just keep stacking them until you are finished.I love these filled with strawberries and topped with whipped cream,or sweetened ricotta and topped with fresh fruit or a chocolate sauce.Even just plain jam or jelly is good too.My son and daughter in law babysit for this little guy,he's two years old and he can be very picky the last time he was at my house I rolled three of them with jelly and he ate every bite.SmileThe first one might not come out very good just keep going you'll get the hang of it.I saw Julia Child put a chocolate sauce between each crepe piled high and cut like a cake,she said it was from a Hungarian friend of hers.
